Bacon Wrapped Pork Tenderloin (Grilled or Baked)

Bacon Wrapped Pork Tenderloin is such an easy meal to prepare and serve!  Seasoned pork tenderloin is wrapped with bacon slices and baked, or grilled, to perfection!

Pork tenderloin is a tender cut of meat to begin with, but the addition of bacon really adds to the tenderness and flavor! By slicing the meat into medallions to serve, there is a little bit of bacon in every bite! Really, bacon wrapped anything is always a good idea!

Pork tenderloin is one of my favorite proteins just simply roasted in the oven or stuffed pork tenderloin. It’s incredibly juicy and tender and everyone in my family loves it.  While I often simply season and cook pork tenderloin in the oven, this is one of those easy pork tenderloin recipes that is kind of next level and can be pork tenderloin oven baked, or grilled pork tenderloin.

We absolutely love to cook this pork tenderloin recipe on the grill, but we do use a grill mat to keep the bacon from flaring up. If you’ve never cooked on a grill mat before I can’t say how much I recommend them!  I they’re perfect for everything from Grilled Zucchini  to Grilled Asparagus and we often to homemade burgers on them too.  You still get that nice char but nothing falls through and they’re a snap to wipe clean.

How to Cook Bacon Wrapped Pork Tenderloin

  • Allow the tenderloin to come to room temperature.
  • Season with your favorite seasoning, or homemade Italian Seasoning with salt & pepper.
  • Wrap tenderloin with bacon slices and secure with toothpicks.
  • If cooking in an oven and the bacon has released a lot of grease, use a clean baking pan before broiling as the grease will smoke and splatter.
  • If cooking on a grill, use a grill mat (or a sheet of foil) to avoid bacon drippings from flaring up.
  • Use a meat thermometer and remove from heat once the internal temperature reaches 145 degrees F.
  • Allow the tenderloin to rest for 5 minutes before serving.

It is important to rest almost all cuts of meat after grilling for two reasons. First, the juices are redistributed and absorbed back into the meat making it far more tender and juicy. Second, the internal temperature of the meat will continue to rise as it rests.  You can find more information on cooking the perfect pork tenderloin here!

Pork tenderloin is lean and should be cooked to about medium and it’s fine to be a touch pink.  Since it’s a fairly long thin cut of meat, this won’t take long (and I’d highly recommend using a thermometer to ensure it reaches the right temperature). Allow about a 20-minute cook time in a 400 degree oven or on a medium heat grill. In either case, remove once the pork tenderloin form the heat once the internal temperature reaches 145 degrees F. Be sure to allow it to rest at least 5 minutes before slicing.

Bacon Wrapped Pork Tenderloin is such an easy meal to prepare and serve!  Seasoned pork tenderloin is wrapped with bacon slices and baked, or grilled, to perfection!

  • 1 lb pork tenderloin
  • southwest seasoning or your favorite meat seasonings
  • 8 slices bacon
  1. Preheat oven or grill to 400° F. Line a baking sheet with foil
  2. Season the pork with southwest seasoning.
  3. Wrap the pork tenderloin in bacon using toothpicks to secure.


  1. Place pork on foil lined sheet and bake 18-20 minutes or until a meat thermometer reaches an internal temperature of 145° F.
  2. Broil 2-3 minutes to crisp bacon.
  3. Allow to rest for at least 5 minutes before slicing.


  1. Place pork on grill mat and cook 20-22 minutes rotating every 5 minutes or until a meat thermometer reaches an internal temperature of 145° F.
  2. Allow to rest for at least 5 minutes before slicing.

Easy Baked Alaska

Baked Alaska is easy to make with only 5 ingredients and while it looks fancy, it’s actually really easy! I first had this on an Alaskan cruise and knew I had to create a simple version at home!

Homemade Blueberry Pie

Blueberry Pie is a classic dessert that has been passed down for generations. Luscious blueberries in a sweet filling are encased in a tender, flaky pie dough and baked until golden brown and bubbly.

I love all berry desserts from an easy and delicious Blueberry Cobbler to our favorite Blueberry Buckle and this blueberry pie definitely tops the list! We like to serve this a la mode.

Homemade Blueberry Pie

Blueberry Pie is as delicious and as easy as… well, apple pie.

Pie Crust for Fruit Pies

You can use pre-made frozen pie crusts or find them in the refrigerator section of your local store. They taste pretty comparable to scratch and are so easy to use! If you prefer a crumb topping, like in my easy Apple Crumb Pie, you can replace the top crust with a crumb topping!

Often when baking a pie, the outer crust can brown too quickly.  To avoid browning the outer edges of the crust too quickly a simple pie shield is a great way to solve this problem or you can simply cover the edges with foil.

How to Make Blueberry Pie with Frozen Blueberries

I have to be honest, the consistency of this pie is MUCH better with fresh blueberries. While fresh berries are preferable, I know they’re not always available (or can be crazy expensive) so frozen can be a substitute, especially in the cooler months.

Here are some tips when substituting frozen for fresh blueberries.

  • You do not need to defrost the berries first (but may need to add a few minutes cooking time).
  • Be mindful when mixing that the berries, if thawed, will be delicate and may break.
  • Add at least 1 tablespoon of extra cornstarch to the blueberry mixture.

Frozen blueberries can sometimes leak a little bit of extra liquid making for a pie that can be a bit more runny. Be sure to allow it plenty of time to set and cool as a warm pie will not be set. Once cooled completely and set, you can reheat the pie a little bit for serving.

How to make Blueberry Pie

  1. Combine blueberry pie filling ingredients and toss together with the blueberries.
  2. Line the pie plate with your bottom crust. Fill with berry mixture.
  3. Roll out your second pie crust and cut it into 1″ strips. Weave the strips over the pie to create a lattice crust. (How to Make a Lattice Crust).
  4. Brush with milk or butter for a glossy look and sprinkle with decorator sugar for sparkle!

When the blueberry pie filling begins to bubble, you’ll know your pie is nearly done. Allow to cook until the crust is golden!

Once your Blueberry Pie is perfectly done, be sure to allow time to cool and set. Skipping this step will be disappointing as the pie won’t set up properly and will be runny (but still delicious). A perfectly presented piece of pie!

Homemade Blueberry Pie

Tender flaky pie crust filled with a sweet lemon kissed blueberry filling.

  • 1 recipe 9" double pie crust
  • 3/4 cup white sugar
  • 5 tablespoons cornstarch
  • 1 lemon (zested & juiced)
  • 1/2 teaspoon ground cinnamon
  • 5 cups fresh blueberries
  • 2 tablespoons milk (or butter)
  • coarse sugar for sprinkling
  1. Preheat oven to 400°F. Zest lemon.
  2. In a small bowl, mix sugar, cornstarch, lemon zest, 1 tablespoon lemon juice, cinnamon and a pinch of salt. Add to blueberries and gently stir to combine.
  3. Place one crust into the pie plate. Fill with blueberry mixture. 

  4. Top with remaining crust and cut 4-5 slits in the crust to allow steam to escape. If preferred, create a lattice crust by cutting the top crust into 1″ strips and weaving them over the pie. Brush the crust with milk.

  5. Place pie on a pan to catch any drippings. Bake pie on lowest shelf of oven for about 45-55 minutes or until filling is bubbly and crust is golden.

  6. Cool at least 2 hours before serving.

If edges of crust start to brown too much, cover with foil.

The main herbs commonly used are oregano, basil, thyme and rosemary (many recipes contain marjoram but I rarely have it on hand so I make this Italian Seasoning without marjoram). I also include parsley, red chili flakes and garlic powder for additional zest and flavor.

How to Make Italian Seasoning

This seasoning is so simple to make and tasty that you will never bother to purchase store bought again! Simply measure out the given herbs and spices, mix and store in an airtight container. This will stay perfectly fresh for 6 months if stored in a dark cupboard or drawer and in an airtight container. This is good practice for all your herbs and spices!

Grilled Zucchini

Grilled Zucchini is the perfect summer side for just about any meal! Light and flavorful zucchini slices are given the perfect grill and covered in lemon juice for a fresh and simple kick.

I love barbecuing in the summer, and you’ll find me in front of the grill 8 days out of 10 making salmon foil packs or Easy Grilled Chicken Breasts.  When I’m cooking a main dish on the grill, I find it so much easier to make a side that can be cooked on the grill too!

Grilled zucchini is the perfect way to round out an easy meal on the grill. It goes great alongside pretty much any meal and is both quick and simple to make. The olive oil and lemon create a delicious ‘marinade’ that won’t overpower the flavor of the zucchini!

How To Grill Zucchini

I love making baked zucchini, but in the summer months, the grill is my friend! There is nothing like food off the grill with a slightly smoky flavor cooked on the deck. While I often make Grilled Herb Marinated Veggies, I always have TONS of zucchini from the garden so we make a lot of grilled zucchini too!

To Make Grilled Zucchini…

  • If using wood skewers, soak them in water.
  • Cut zucchini into ¾”-1″ pieces.
  • Toss with olive oil, seasonings and a squeeze of lemon
  • Thread onto skewers and grill for about 3 to 5 minutes or until tender crisp. 
  • Give an additional squeeze of lemon (or parmesan) and serve.

How Long To Grill Zucchini

Grilled zucchini cooks fast, so you need to make sure you are watching it while you cooked. No one likes mushy food!

Your grill should be preheated to medium high before you start cooking them. Place your grilled zucchini on the grill and cook it for about 3-5 minutes on each side. Once it is cooked on both sides and tender yet still crisp (it should hold its shape well), take them off the grill and enjoy them right away!

Light and flavorful zucchini slices are given the perfect grill and covered in lemon juice for a fresh kick that you won’t get from any other side dish.

  • 2 medium zucchini
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1 lemon (divided use)
  • seasoning salt & pepper to taste
  1. Preheat grill to medium-high.
  2. Slice zucchini about 3/4″ thick and place in a bowl.
  3. Add olive oil, garlic powder, salt & pepper. Squeeze half of the lemon over the zucchini and toss to combine.
  4. Thread zucchini onto skewers and grill 3-5 minutes on each side or until tender crisp. Remove from grill and squeeze remaining lemon overtop.
  5. Serve immediately.

Perfect Baked Potatoes

Baked Potatoes are easy to make and they are a delicious and fun way to prepare everyone’s favorite spud. Potatoes are baked until the skin is crisp, and the insides are soft, white, and fluffy.

Top baked potatoes with your favorite toppings like bacon, sour cream or cheese to create a perfect side dish (or heartier meatier options to turn it into a complete meal)!

Baked potatoes go perfectly alongside a steak, grilled veggies, and a salad or put everyone’s favorite toppings, and have them dress their own. Everyone loves loaded baked potatoes!

What Kind of Potatoes for Baked Potatoes?

Russet potatoes are the most commonly used for making baked potatoes, they have the fluffy starchy texture we love in a baked potato.  Truly, red skinned potatoes, Yukon gold, and purple potatoes are all delicious when baked too although the texture is a bit more buttery.

How To Make A Baked Potato in the Oven

A baked potato is very simple to make, just 3 ingredients needed to get a deliciously crisp skin and a fluffy interior perfect for topping! The classic method of making a perfect baked potato is in the oven (although on a hot summer day, I often cook baked potatoes in the slow cooker).

  1. Scrub potatoes to remove any dirt or debris.
  2. Poke holes all over the potato using a fork – about 5 to 6 times. This prevents steam building up inside of the potatoes while they bake. A potato can explode if steam builds up so make sure you poke right into the potato to create holes, not just pierce the skin.
  3. Coat the potatoes in olive oil and salt.
  4. Place the potatoes directly on the oven rack and bake.

If you want a softer skin on your baked potatoes, wrap them in foil before they go in the oven. This helps to steam the skin keeping it from crisping up as much (although I prefer the skin to be crispy!

These are perfect for making twice baked potatoes or even our favorite Baked Potato Soup!

How Long To Bake A Potato

A baked potato will take 45-60 minutes in the oven. Cooking times can vary depending on the size of the potatoes and the temperature of the oven, so the easiest way to test them is with a fork.

A perfect baked potato should be soft inside, and have a crisp skin.

What Temperature to Bake Potatoes?

The great thing about baked potatoes is they can be baked at any temperature. If you have other things cooking in the oven, baked potatoes can just be thrown in quickly without too much to worry about.

Baked Potato Cooking Times:

  • 350°F 60 to 75 minutes
  • 375°F 50 to 60 minutes
  • 400°F 40 to 50 minutes

If the temperature is adjusted to match whatever else is cooking, just adjust the cooking time accordingly!

How To Bake A Potato in the Microwave

Baked potatoes take awhile, there is no doubt about it. If you are pressed for time (or coveted oven space), the microwave method will be your saviour!

Scrub the potato and poke it with a fork as above. Place it on a plate and microwave it on HIGH for 5 minutes. Turn it over, and microwave it for 3-5 minutes longer or until fork tender. Top and enjoy!

REMINDER: Do not to use foil if you are making baked potatoes in the microwave.

Baked Potato Toppings

Here are some of my favorite baked potato toppings to serve, keep it simple to have the potatoes as a side and choose a heartier topping to make the baked potatoes the main star of your meal. If you’re serving a crowd, create a baked potato bar at home and let everyone top their own!

  • Butter, salt & pepper – of course!
  • Bacon bits, green onions or chives
  • Cheese – cheddar cheese is the best but experiment with your favorites!
  • Sour cream or Greek Yogurt
  • Salsa & white onions

Hearty Baked Potato Toppings

  • Chili, cheddar and a handful of corn chips
  • Taco meat with your fave taco toppings
  • Alfredo sauce, steamed broccoli & cheddar cheese
  • Beans and wieners or baked beans
  • Sloppy Joe meat or leftover pulled pork
  • Buffalo Chicken drizzled Buffalo Sauce and blue cheese

Baked Potatoes

Potatoes are baked until the skin is crisp, and the insides are soft, white, and fluffy. Top the baked potato with your favorite toppings like bacon, sour cream, cheese, or green onions for a side dish like no other!

  • 4 russet potatoes
  • 2 tablespoons olive oil
  • salt
  1. Preheat oven to 375°F.
  2. Scrub potatoes to remove any dirt or debris. Dab dry.
  3. Poke holes over potatoes with a fork in about 5-6 places per potato.

  4. Coat the outside of each potato with olive oil and salt.
  5. Place potatoes directly on the middle rack of your oven and bake 50-60 minutes. (I place a small piece of foil on the rack below to catch any drippings).
  6. Serve hot with your favorite toppings.

Easy Grilled Chicken Breast

Grilled Chicken Breast is the perfect meal!  It’s great added to pasta, put on top of a salad or served with a side of zucchini salad and corn on the cob on a hot summer evening! This easy, healthy recipe produces tender and plump marinated chicken breasts that are grilled to golden perfection.

Grilled Chicken is one of our favorite meals! With a quick marinade and an even quicker grill time, you can have a meal on the table in no time at all!

How to Grill Chicken Breast

In the cooler months, Oven Baked Chicken Breasts are always on our table but come warm weather, we switch over to cooking everything on the grill or BBQ! Grilling chicken breasts over a medium high heat helps to seal the juices in, keeping your chicken breasts nice and moist. The higher heat gives a nice sear adding the char from the barbecue that we all love so much!

If your chicken breasts are very thick in some areas and thin in others, use a meat tenderizer to pound them and even them out slightly. Having them at a somewhat even thickness helps to ensure an even cooking time and perfectly moist grilled chicken!

Boneless chicken breasts are very lean and can dry out easily if overcooked. I’ve found the best way to make tender grilled chicken breasts is to marinate them. You don’t have to marinate for a long time, 30 minutes is good if you can (I like to prep my sides while I wait).

How to Make a Marinade for Grilled Chicken Breasts

A marinade is the perfect way to add flavor to grilled chicken (and it can help tenderize). I try to allow for 30 minutes or more if possible! There are a few essential ingredients in a marinade.

  • Oil:  Most often the base of marinades.
  • Acid: This helps tenderize the meat by breaking down tougher proteins (vinegar or lemon juice are good options)
  • Sugar: Helps with flavor and the caramelization process. (Honey or brown sugar are common).
  • Seasonings: This is the flavor profile, you can use anything from Italian seasoning to curry powder to season your marinade.  This may or may not include salt.
  • Time: Give yourself time to allow your meat to marinade.  The purpose of the marinade is not only to add flavor but to help tenderize your meat.  For chicken I allow 30 min to 4hrs.

The marinade in this recipe caramelizes on the outside of the chicken when grilled, creating a beautiful flavor and an incredibly juicy tender chicken breast!

I love making grilled chicken breasts in large batches to put on top of salads, in weekly meal prep, into quick pasta dishes, or even into chicken noodle soup! It goes so well with just about anything.

How Long To Grill Chicken Breast

This answer can fluctuate depending on how hot your grill gets and the thickness of your chicken breasts.

In this grilled chicken breast recipe, I don’t pound my chicken out unless it is extremely thick in some parts and thin in other parts. Once your chicken breasts are marinated, place them on the grill. Cook them for 7-8 minutes on each side, not lifting during the cooking process (you don’t want to lose your pretty grill marks!)

Flip your chicken and cook for an additional 7-8 minutes, or until a meat thermometer inserted into the largest part of the chicken breast reads 165°F.

It is important to allow your chicken to rest about 3-5 minutes before cutting to keep it juicy (just enough time to fill your plates and get to the table). Serve with your favorite sides, and preferably on a patio with a big pitcher of Easy White Sangria!

  • 1/3 cup oil (olive oil or vegetable oil)
  • 1/4 cup cider vinegar ((or red wine vinegar))
  • 2 tablespoons dijon mustard
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons lemon juice
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 2 tablespoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 tablespoon sugar
  • 4 boneless skinless chicken breasts
  1. Combine all ingredients in a bowl or freezer bag. Add chicken and toss well to combine.

  2.  Marinade for a 30 minutes (or up to 4 hours) before cooking chicken.

  3. Preheat grill to medium high heat.

  4. Place chicken on the grill for 7-8 minutes. Flip over and cook an additional 7-8 minutes or until no pink remains and chicken reaches 165°F.

  5. Rest 3-5 minutes before slicing.

Nutritional information includes 1/2 of the marinade (as the remainder is discarded).
