Easy Cheesy Potato Casserole

Easy Cheesy Potatoes are sure to become a favorite side dish in your house. Tender potatoes in a short-cut cheese sauce are baked until golden and bubbly!

This potato casserole will elevate any meal into a feast. Serve this rich, savory side dish with glazed ham, baked chicken legs or roasted pork tenderloin.

Cheesy Potato Ingredients

While the obvious ingredient is potatoes we add lots of cheddar cheese, sour cream, butter, soup, and green onions finish out this easy dish.

You can vary these ingredients to suit your taste or use what you have on hand.

  • Cheese: I find that cheddar cheese produces the best sauce with the most flavor, especially if you use extra-sharp but a nice swiss or your fave cheese will work just fine!
  • Potatoes: Almost any kind of potatoes will work for this recipe.
    • In a hurry? Use country style hash browned potatoes in place of boiling your own potatoes.
    • Choose thin skinned potatoes (like Yukon gold or red potatoes) and skip the peeling
  • Canned Soup: Use any kind of condensed “cream of” canned soup in this recipe. I love using homemade condensed mushroom soup to control the salt.

If you want to make your cheesy potato bake more of a one-pot meal, then go ahead and add a cup or two of diced ham or some poached chicken breasts (or leftover roast chicken). Even ground beef would be great in this casserole!

How to Make Cheesy Potatoes (with real potatoes)

This casserole recipe is a simple variation of scalloped potatoes, but with diced potatoes and requires less prep thanks to an easy-to-make sauce. Here’s how easy it is to make cheesy potatoes in the oven:

  1. Boil the diced potatoes until tender.
  2. Melt the butter and mix in the remaining ingredients. Save some cheese to sprinkle on top.
  3. Combine all the ingredients together, including the cooked potatoes, and transfer to a greased casserole dish.
  4. Top with the remainder of the cheese and bake until bubbling and browned.

Don’t cover these cheesy potatoes while baking. You want the top to get golden brown.

Not ready to bake it yet? Cheesy potatoes will keep in the refrigerator for 2-3 days before baking. So make this dish extra easy by taking care of all the prep work the day before! Just pop them in the oven following the recipe and you are ready to enjoy.

Can You Freeze Cheesy Potato Casserole?

Cheesy potatoes come out of the oven tender and delicious! You can make and bake this casserole ahead of time and freeze it as well. Or, freeze the leftovers, if there are any!

Let this dish thaw before baking at 400F for about an hour, or until piping hot and the cheese is nicely browned.

Cheesy Potatoes

These potatoes are loaded with creamy goodness like sour cream and cheddar cheese and make a perfect side dish!

  • 3 lbs diced potatoes (or 30oz country style hash browns)
  • 1/4 cup butter (melted)
  • 1 cup sour cream
  • 1 cup cream of chicken soup (or cream of cheddar)
  • 1/4 cup green onion (chopped)
  • 2 cup cheddar cheese (divided)
  1. Preheat oven to 375˚F and grease a 9×13 inch baking dish.

  2. If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.

  3. Melt butter, add sour cream, soup, onion and 1 1/2 cups cheese. 

  4. Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.

  5. Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

Optional topping: For a crunchy topping, combine 1 1/2 cups cornflakes, slightly crushed with 4 tablespoons melted butter. Top casserole before baking.

Perfect Taco Salad (Quick Meal)

Taco Salad is crispy, crunchy and colorful! Crisp lettuce is topped with a zesty seasoned ground beef, crunchy tortilla chips and all of our favorite taco toppings. 

It’s so quick, it makes an easy weeknight meal or even a build-your-own taco salad bar when feeding a crowd!

How to Make Taco Salad

Taco salad is a staple around here! It takes about 20 minutes start to finish (especially if you have other hands in the kitchen prepping toppers) and is a welcome variation of ground beef tacos!

    1. Brown and season ground beef. Stir in beans.
    2. Wash lettuce and top with beef mixture and your favorite toppings.
    3. Scoop into bowls or plates and top with tortilla chips, sour cream, and salsa.

If you’d like to make a crispy baked tortilla bowl (like you’d get at a restaurant), they’re easy to bake at home!

To Make a Crispy Baked Taco Salad Bowl

  • Preheat the oven to 350°F.
  • Spray a flour tortilla with cooking spray (or brush it with butter or olive oil) and season with salt & your fave seasonings (cumin or a bit of chili powder are good).
  • Place the tortilla in an oven proof bowl or a taco bowl maker.
  • Bake 10-15 minutes or until lightly browned and crispy!

Taco Salad Ingredients

The beauty of this tex-mex inspired salad is the fact that you can customize it to what you have on hand or whatever your taste buds desire!

 1. Beef:

    • I use lean beef but ground turkey or chicken will work too, or even juicy shrimp.
    • I prefer Homemade Taco Seasoning but store bought will do in a pinch!
    • Black beans or pinto beans are great additions too.

2. Lettuce:

    • Romaine or iceberg lettuce are crunchy and hold up well.
    • Chop or tear it into bite sized pieces.

    • Cheese – Cheddar, marble, mozzarella or Monterey Jack are great.
    • Tortilla Chips – Pick your favorite tortilla chips. Be sure to add just before serving so they stay crunchy!

    • Veggies – Add a delicious assortment of veggies like olives, bell peppers, onions, jalapenos, avocado or green chiles on top.

4. Dressing:

    • Classic – Sour cream and salsa is our go-to dressing for this salad.
    • Creamy – Try a Ranch Dressing or Avocado Dressing. These will compliment the ground beef and spicy jalapenos perfectly.
    • Zesty – Or you can use Thousand Island Dressing or store bought Catalina for a yummy alternative.

What to Serve with Taco Salad

This Taco Salad is definitely a full meal in itself, simply pair it with a cold beverage like horchata, lemonade, or even a fruity Sangria or Margarita!

If you want to keep your menu super simple, serve warmed soft tortillas on the side to create a quick taco or burrito at the ready.

Feeding a larger crowd? Add Spanish Rice or this zesty Cilantro Lime Rice to your menu! In keeping with the Mexican theme and to finish off the evening, try some dulce de leche, Mexican chocolate mousse or Easy Sopapilla Cheesecake for dessert!

Taco Salad

Beef

  • 1 lb lean ground beef
  • 1 package taco seasoning (or homemade)
  • 1 cup black beans (drained and rinsed)

Salad

  • 6 cups romaine or iceberg lettuce (chopped)
  • 1 cup tomatoes (chopped)
  • 1 cup shredded cheddar cheese
  • 1 avocado (diced)

  • 1/2 cup sour cream

  1. Brown beef over medium heat until no pink remains. Drain any fat.

  3. Place lettuce in a large bowl. Top with meat, tomatoes, cheese, avocado and desired toppings.
  4. Top each serving with tortilla chips, salsa and sour cream.

While we use sour cream and salsa as dressing, catalina or Thousand Island are also great tossed with this salad.

How to Make Stove Top Mac and Cheese

This stovetop mac and cheese is the creamiest version! The secret to this recipe is that the pasta is boiled in milk (which means only one pot for easy clean up). It’s as easy as 1,2,3!

  1. Combine milk, garlic powder, butter and water in a saucepan and bring to a boil.
  2. Add in the macaroni noodles and reduce the heat to low (adding liquid as needed). Cook until the noodles are tender, about 20 minutes.
  3. Once the pasta is fully cooked, add the rest of the ingredients and stir until melted.

The final result is a smooth and hearty easy family entrée that everyone will love and want seconds of!

Troubleshooting

This recipe is really easy to make but here are a few to tips to make sure it comes out creamy.

When the macaroni is done cooking in the milk, you do not want it dry.  You may need to add more milk/water to the pot while it is cooking. The macaroni noodles should be as moist as the photo on the top right below BEFORE you add in the cheese.  Once you add the cheese, remove it from the stove and stir until the cheese has melted.

Keep in mind, pre-shredded cheese often has additives to keep it from clumping. These additives can cause it to be grainy instead of creamy.

Bubble Pizza is almost as much fun to make as it is to eat. If you’ve ever had monkey bread, pull apart pizza bread is a similar concept. Canned biscuit dough (or even homemade biscuits) are tossed with cheese, pizza sauce and toppings for an easy snack!

Ground beef enchiladas are one of our favorites dinners along with creamy chicken enchiladas. Take your tex-mex game to the next level with this easy recipe!

How to Make Beef Enchilada Sauce

  • How to Make Enchilada Sauce: Making a beef enchilada casserole is super easy!  I prefer to use Homemade Enchilada Sauce but if using canned sauce instead, I usually mix in a little more cumin, red chile, or even salsa.
  • Tortillas: Traditional enchiladas use corn tortillas but if you’d prefer flour, those will work too. To keep corn tortillas from cracking when you roll them, be sure to heat them according to package directions. I usually heat them directly over my gas stove for a moment or two.
  • Filling: Most beef enchilada recipes leave wiggle room for more or less of your favorite ingredients. I add pinto beans but black beans work well too.

How to Make Beef Enchiladas

Now for the fun part – assembling these enchiladas!

  1. Enchilada filling: Brown the beef and drain any fat. Add in beans, seasonings and a little sauce. Simmer until thick.
  2. To Roll Enchiladas: Heat the corn tortillas until they are soft and fill them with a little bit of cheese beef and beans. Roll them and place seam side down.
  3. Top with more enchilada sauce and cheese. Bake until melted and bubbly.

How long to cook enchiladas: You’ll want to cook these beef enchiladas about 20 minutes or so. When cooking enchiladas, you’re more just heating things through since they’re already cooked. Cool about 10 minutes before serving.

Serve with a dollop of sour cream, extra cheese and some cold cervezas (or Mango Margaritas)!

How Do You Store or Freeze Beef Enchiladas?

If there are any left, you mean! Store your beef enchilada casserole in an airtight container and place it in the fridge. For freezing an entire pan of beef enchiladas, it’s a good idea to line the casserole dish with aluminum foil before assembling the ingredients.

After they are baked, cool completely in the fridge and then cover and freeze. After your enchilada casserole is completely frozen, gently lift it from the casserole dish and wrap, label and return to the freezer.

You can also divide the portions and separately wrap and label them as well for a quick and tasty office lunch or quickie dinner for two!

  • 1 onion (diced)
  • 2 cloves garlic (minced)

  3. Stir in beans, seasonings, 1/4 cup enchilada sauce, and 1/3 cup water, salt. Simmer until thickened.

  4. Spread 1/2 cup enchilada sauce in the bottom of a baking dish. Heat tortillas according to package directions (or over a gas stove) until soft.

  5. Place 2 tablespoons cheese and 1/3 cup beef filling in each enchilada. Roll and place seam side down in the pan.

  6. Top with remaining enchilada sauce and cheeses. Bake 20-25 minutes uncovered or until cheese is melted and filling is hot.

  7. Cool 10 minutes before serving.

How to Make Cream of Cauliflower Soup

There really isn’t a lot to creating the perfect cream of cauliflower soup recipe. Simply chop the cauliflower into bite sized pieces, add seasonings and let it simmer until tender. Blend and add a bit of cream.

I sometimes add cheese to this soup, both sharp cheddar and parmesan cheese work well. Remember to add the cheese at the end, once the soup is ready to serve. Cooking cheese over a high temperature can cause it to separate or become grainy. It will melt in if the soup is hot once you remove the soup from the stove.

Blending Cauliflower Soup

Just like Roasted Cauliflower Soup, this cream of cauliflower soup is blended to a smooth consistency. I use a hand blender to make it smooth (and save on washing dishes) but you can also transfer it to a regular blender. If using a regular blender, be sure that the lid isn’t on tight as the steam and cause the blender to burst open.

For more texture remove some of the cauliflower and chop it. Blend the soup to desired consistency and once blended, add the chopped cauliflower back into the soup.

Can You Freeze Cream of Cauliflower Soup

This soup does freeze well. We place it in single serve freezer bags and label. To serve, defrost in the refrigerator overnight and reheat in a saucepan over medium heat until warm.

Cream of Cauliflower Soup

A silky smooth cauliflower soup for the perfect lunch or starter.

  • 1 small onion (diced)
  • 2 stalks celery
  • 2 tablespoons butter
  • 8 cups fresh cauliflower
  • 3 cups chicken broth
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon seasoning salt
  • 3/4 cup heavy cream
  • 1/2 cup fresh parmesan cheese (grated, optional)
  1. Heat butter in a medium saucepan over medium heat. Cook onion and celery until tender (do not brown).

  2. Add cauliflower, broth and seasonings. Simmer uncovered 10-15 minutes stirring occasionally until cauliflower is tender.

  3. Blend using a hand blender until smooth. Add heavy cream and simmer an additional 8-10 minutes or until thickened.

  4. Season with salt & pepper to taste. Stir in parmesan cheese if using.

Note: For a chunky texture, remove 1 cup of cauliflower before blending and coarsely chop.

How to Make Bean Dip

  1. Whip the refried beans, the cream cheese, sour cream, and taco seasoning until it’s all fully mixed. Use a hand mixer or a whisk, but make sure everything is fluffy to avoid a chip-wreck! A rich cream bean dip full of flavor! Loads of cheese and a handful of jalapenos take this dip to the next level!

  • 4 oz cream cheese (softened)
  • 16 oz refried beans (canned)
  • 1/2 package taco seasoning
  • 4 oz can diced mild green chiles (drained)
  • 1/2 cup sour cream
  • 2 green onions (divided)
  • 1/4 cup chopped jalapenos (optional)
  • 3 cups cheddar cheese (divided)
  1. Preheat oven to 375°F.
  2. Slice green onions dividing the white and green portions. Set the green part aside.
  3. Combine cream cheese, refried beans, taco seasoning and sour cream with a hand mixer on until fluffy.

  4. Add the whites of the onions, jalapenos, chiles and 2 cups of cheddar cheese.

  5. Spread into a 2qt (or 8×8) baking dish.

How to Make a Roux for Cheese Sauce

The most important part of any good sauce is a ‘roux’ which is, essentially, a cooked, thickened combination of butter and flour.

This will be the base of the sauce and it only takes a few minutes to whip up! Be sure to stir it constantly and cook the flour to rid of any starchy flavor before adding the other ingredients.

How to Make a Cheese Sauce

Here’s where it gets good! Really good! To make a cheese sauce:

  1. Cook flour and seasonings with butter to remove any floury flavor
  2. Slowly add in some milk to the roux and whisk constantly (it will be super thick). Keep adding a little at a time until it smooths out.
  3. Whisk until it reaches a boil and let bubble 1 minute.
  4. Remove from heat and add cheese. Whisk until smooth.

Remember to always remove from the heat before adding cheese, the milk will still be plenty hot enough to melt it. Cheese can separate or become grainy if it gets too hot.

Be sure to adjust for taste, feel free to add a splash of hot sauce or garlic powder…anything that you want!

How to Thicken Cheese Sauce

The ratio below will create a perfectly thick and cheesy sauce and shouldn’t require thickening.

The best way to thicken a cheese sauce would be to add more cheese! Who can resist a thick, creamy, savory cheese sauce perfect for making Homemade Mac and Cheese too!

Another way to thicken a cheese sauce is to add a little bit of cornstarch slurry (equal parts cornstarch and water) added a little at a time to hot cheese sauce. This method is less desirable, you do risk the cheese separating if you re-heat it too much when thickening.

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon white pepper (or a pinch)

  • 1/4 cup parmesan cheese
  1. Melt butter in a saucepan. Add flour and cook for 1-2 minutes.
