Slow Cooker Korean Beef

Amazing and flavorful beef that slow cooks to tender melt in your mouth perfection! This will be one of the best meals that you will make!

When I started to do some research on a Korean Beef recipe, I found that the recipes are pretty similar to this Korean Ground Beef and Rice BowlsSlow Cooker Mongolian Beef or Korean Ground Beef Stir Fry.  What they have in common is unbelievably flavorful beef that is quick and easy to make and enjoy!

Slow Cooker Korean Beef

Slow Cooker Korean Beef first posted when my youngest sister had just left for college in Korea. We had a fun little going away party for her where I served this Korean beef and it was amazing! The flavors were out of this world and it was a huge hit at the party.  As soon as it came out of the slow cooker we couldn’t stop eating it. The flavor is absolute perfection.

Cooking the flank steak low and slow made it so tender.  The sweet and spicy sauce soaked into the meat and made every bite explode with flavor!  This recipe instantly became a favorite here on the blog and in my family. It was definitely one of the best things that I have ever had!  No wonder it quickly became so popular!

Ingredients for Korean Beef:

The ingredients in this slow cooker beef come together so well and you are going to love the flavor of this beef. It thickens up as it cooks and coats the chicken perfectly. Top with some sesame seeds and green onions and you will have a meal that you will make again and again!

  • Flank Steak: Cut in thin slices against the grain to make it tender and juicy.
  • Cornstarch: To thicken the sauce.
  • Sesame Oil: Great Asian flavor and it will help other flavors soak into the beef.
  • Garlic Cloves: Minced, these will give right flavor to the sauce.
  • Soy Sauce: Adds a rich sweet and savory flavor.
  • Beef broth: Liquid to cook the beef and adds a bit of flavor.
  • Brown Sugar: Sweetness to balance out the other savory and spicy notes.
  • Onion chopped: Adds moisture and deep flavor.
  • Red pepper flakes: Add at the end of the cook time for a less spicy version. The red pepper spice will get stronger as it cooks.
  • Garnish: Sesame seeds and green onions

How to Slow Cook Korean Beef:

This melt in your mouth tender beef takes only minutes to get started in a slow cooker.  Simply cut your steak into strips, fill your crock pot with all the ingredients, and sit back and enjoy the delicious smell of dinner cooking!

  1. Prepare flank steak: Cut flank steak into thin strips. In a ziplock bag add flank steak pieces and cornstarch. Shake to coat.
  2. Combine ingredients in slow cooker: Add sesame oil, minced garlic, soy sauce, beef broth, brown sugar, onion, and red pepper flakes to the slow cooker. Stir ingredients. Add coated flank steak and stir again until coated in the sauce.
  3. Cook for high 2-3 hours or on low 4-5 hours until cooked throughout and tender.
  4. Serve: Plate flank steak over rice and garnish with green onions.

Tips for the Most Tender Beef:

I love cooking beef in the slow cooker because it cooks the meat so well. It is one of my favorite ways to cook it.  The juicy beef gets so tender it falls apart in your mouth. That’s great news for a meat that can sometimes turn tough and dry when it cooks!  Here are my expert tips to make this the best Korean beef you have ever made!

  • Slicing flank steak: The easiest way to slice your beef is to cut it when it is very cold.  Cut against the grain.
  • Variations: Add broccoli in at the end of the cook time for a nice crunch.  Or add it in about halfway through cook time for softer brocccoli.
  • Serving ideas: Serving with rice is a classic favorite.  However, if you are watching your carbs you may want to try cauliflower rice or zucchini noodles instead.  Add a colorful Asian Salad for a complete meal.

Storing Slow Cooker Beef:

After buying flank steak at the store you can refrigerate it for 3-5 days.  If you are not ready to cook this delicious recipe right away you will want to freeze it until you are ready to cook it.  Before freezing it, place extra airtight wrap around the store bought packaging to reduce freezer burn.  The uncooked meat can stay frozen for 6-12 months.

Once you have cooked your perfect slow cooker beef, you will not want to miss the delicious leftovers!  Eat them within 4 days if you are storing it in the refrigerator or 3 months if you decide to freeze your leftovers.

  • 1 ½ pounds Flank Steak

Instructions

  1. Fry Tortillas: In a medium sized skillet add vegetable oil filling up to about 1/2 inch on the sides.  Heat the oil to medium high heat.  Poke holes with a fork in the tortilla and add it to the hot oil.  Fry on each side until golden brown 1-2 minutes.  Remove and set aside.
  2. Cook Beef: In a medium sized skillet over medium high heat cook and crumble the ground beef.  Drain the grease.  Add in the taco seasoning.
  3. To assemble: Heat the refried beans over the stove or in the microwave until warm.  Spread a thin layer on the tortilla followed by the ground beef and cheese.  Top with desired toppings.

Tips for the Perfect Tostada:

  • Frying: It is best to use a cooking thermometer to check the oil. The oil will need to be around 350 to 375 degrees Fahrenheit. Once they are fried on both sides add the fried tortillas to a plate that is prepared with paper towels on it. The paper towels will help soak up any extra grease that is left on the tortillas.
  • Baking: Preheat oven to 400 degrees. Lay the tortillas on a baking sheet. Brush the tops with olive oil. Bake for 8-10 minutes until crispy and flip half way through.
  • Preparing the Tortilla: Poking holes in the tortilla will help the tortilla stay round and not curl too much while being fried.
  • Tortillas: Corn tortillas are best and the perfect size. I like the smaller round size. When choose a tortilla, choose one that is not already cooked and can be fried. Smaller the size the better and easier to flip over in the pan.
  • Assembling: Once cooled, start layering your tostada. It works best to have the heavier more dense ingredients on bottom like refried beans, meat, then the cheese will melt over top the meat, then continue on to the next optional toppings of choice.

  • Zucchini: Wash the zucchini and cut of both ends. Leaving the skin on the zucchini, grate the zucchini the best that you can using a paper towel or strainer. Once the water has been released place in the bowl to be blended in the bread mix.
  • Fresh Zucchini: It is best to use garden fresh zucchini. Store bought zucchini has been sitting in several trucks and boxes before it arrives in a store to be sold. It is not as fresh and moist as a garden zucchini is.
  • Add Ins: Chocolate chips or nuts are always a fun add in to put in the zucchini bread. Add in 1/2 cup to 3/4 cup chocolate chips or nuts into the blended mixture before baking.

Storing Quick Bread:

This zucchini bread is not going to last long. It is a favorite family recipe and quickly gone before I am ready to store it. Usually doubling the recipe helps me be able to store a few slices for a day, hopefully!

  • Storing Zucchini Quick Bread: Store the homemade baked bread in a ziplock bag. Leave out in room temperature for about 3 to 4 days long. Slice when ready to serve.
  • Freezing Zucchini Bread: Follow the instructions to make the best zucchini bread. Once it has completely cooled, wrap tightly in plastic wrap and then aluminum foil. Add it to a ziplock or freezer bag. Place in the freezer up to 1 month long. When ready to thaw, place in the refrigerator over night and unwrap to serve.

Growing up in Alabama, Tomato Pie was a summer staple and one we enjoyed often. It’s Aimee here from the site Aimee Mars and southern recipes are my specialty. The basic ingredients in this simple and delicious recipe are mainly the same for all, but there are several different ways to prepare it. One this is for certain though, every end of summer should include this delicious recipe.

Ingredients in Tomato Pie

This savory pie is made of just a few basic ingredients, most of which you probably have on hand. The key is choosing super firm tomatoes, whether they come from your own garden, farmers market, or your local grocery store. Use your fingertips to gently squeeze the tomatoes to test their firmness.

  • 9-inch pie shell: you can use a store-bought pie shell if you’re looking to make this recipe quickly or you can make a delicious one of your own like this buttermilk pie crust.
  • 6 Tomatoes, large and very ripe: the firmer the tomatoes the better. If the tomatoes are too soft they’ll have way too much moisture, which will make your pie soggy.
  • Salt: this is just a basic salt for coating the tomatoes before adding them to the recipe, it helps to drain any additional water.
  • Fresh Basil: basil and tomato were meant to go together and putting this fresh ingredient in tomato pie are no different. I highly recommend using fresh basil if you can find it.
  • Freshly Shredded Cheddar Cheese: you can use already shredded cheddar cheese for this recipe, but shredded your own makes it slightly softer and so it melts perfectly together into the pie.
  • Mayonnaise: this key ingredient slightly holds this pie together and adds some delicious flavor.
  • Seasoning: salt, pepper, and garlic powder and the main spices for this recipe, however, you can easily add in some more such as paprika and chili powder if you like a spicier version.

How to Make Tomato Pie

  1. Prepare the Tomatoes: slice the tomatoes about 1/4-inch in thickness and lay them flat in a single layer on a paper towel-lined baking sheet. Cover the tomatoes in salt and then a top layer of paper towels and let sit for 10 minutes.
  2. Mix the Base: In a large bowl combine the shredded cheese, mayonnaise, fresh basil, and seasoning until fully combined.
  3. Arrange: place your desired pie shell into a pie dish and begin to arrange the pie by layering a single layer of tomatoes on the bottom. Then spread half of the cheese mixture on top of the tomatoes. Place another layer of tomatoes, overlapping some, on top, and repeat with the remaining cheese mixture. Finish layering the pie with some tomatoes on top. Firmly press the tomatoes in so the mixture comes together. Sprinkle some additional basil on top if desired.
  4. Bake: Place the pie in a pre-heated oven at 350º F and bake for 35 to 45 minutes, until the cheese becomes bubbly.

Which Tomatoes are Best for Tomato Pie?

The standard beefsteak or plum tomatoes work best for tomato pie because they’re not as juicy as tomatoes such as heirloom. Make sure to choose tomatoes that are firm to touch and not soft. If you really want to use heirloom tomatoes then you absolutely can, just also make sure they’re super firm. If you choose tomatoes that are too soft it will be hard to remove the water content and your pie will turn out soggy.

Can I use a Store-Bought Pie Crust?

Yes! If you’re short on time or just don’t want to hassle with making a crust then a store-bought crust will work just as well. There is one trick I always like to use though, and that’s to double up the crust. Purchase a dough that comes with two shells and layer one right on top of the other in your pie dish. This makes for an extra thick crust.

Make the Filling:

  • In a medium bowl combine the shredded cheese, mayonnaise, fresh basil, and spices together until mixed well. Set aside.

Arrange the Pie:

  • Place the 9-inch pie shell into your pie dish and arrange a single layer of sliced tomatoes on the bottom. Cover the tomatoes with half of the cheese mixture and repeat this step.

This Easy Tomato Jam is the perfect condiment to slather on toast, sandwiches, and everything in between. All you have to do is throw everything in a pot, let it simmer, and you’re done.

Homemade Tomato Jam

If there’s anything you do with all those leftover tomatoes this summer, make this tomato jam! It’s the perfect combination of sweet and savory, and goes with pretty much anything. We love to slather it on toast with a runny fried egg, snuggle it into plain turkey sandwiches, and serve it alongside grilled chicken.

Bonus? It’s a virtually fool-proof, hand-free recipe. All you have to do is throw everything in a pot and let it do its thing until the tomatoes break down and are perfectly jammy and sweet.

Ingredients in Tomato Jam:

  • Tomatoes. If you have a ton of leftover heirloom tomatoes you need to get rid of, of course you can use those, but tomato jam is best purposed for those less sweet Roma tomatoes.
  • Vinegar. Ever jam needs a little bit of acid, and while you could use pretty much any vinegar you have on hand, we went with apple cider vinegar. It has the perfect amount of sweet and acidic flavor, plus it’s super affordable.
  • Lemon. To me, lemon and tomato go hand in hand, so we add just a little bit in addition to the apple cider vinegar.
  • Onion and garlic. You won’t always find onion and garlic in a tomato jam recipe, but I really like the extra flavor and texture they both add to the tomato jam.
  • Spices. For a smoky, warm flavor, we add both ground cinnamon and ground cumin. Just enough to add a little bit of flavor, but not enough for it to be singled out.
  • Sugar. Another really important ingredient in our tomato jam. Sugar of course, adds sweetness to the tomato jam, but it’s also necessary to balance out all the acid in the tomatoes, vinegar, and lemon juice.

Let’s Make Some Jam!

Guys. This is SO easy. Here’s how it goes down.

  • Chop the tomatoes. You’ll want to take out the core of each tomato, but leave the seeds and skin.
  • Add tomatoes, vinegar, lemon juice, sugar, spices, salt, onion, and garlic to a large pot. Stir.
  • Bring the mixture to a boil, and reduce to a simmer.
  • Cook until jammy and sweet and savory and delicious!

Substitutions, Tips and Tricks for Recipe Success:

  • While our recipe does call for Roma tomatoes, if you have leftover tomatoes, then by all means, use what you have!
  • If you only have apple cider vinegar or lemon juice, you can use one or the other.
  • Apple cider vinegar can be swapped out for white wine vinegar or sherry vinegar.
  • Stir frequently to prevent the tomatoes from burning or sticking.
  • Season properly! In addition to the teaspoon of salt the recipe calls for, you will also have to adjust to your taste. I like things on the saltier side, so I always end up adding a half teaspoon or so more.Tomato jam in a clean can jar with a wooden spoon on the side with tomato jam on it.

Uses for Tomato Jam:

  • Spread whole-grain toast with whipped ricotta cheese and tomato jam
  • Spoon tomato jam on top of brie and bake in a 375-degree oven until brie is melted, about 15 minutes.
  • Spoon tomato jam on top of burrata cheese and serve with toasted crostini.
  • Slather tomato jam on whole-wheat bread with Boursin cheese and thick-cut roasted turkey.
  • Serve alongside scrambled eggs and toast.

Making Tomato Jam with Pectin:

If you want a more jell-like texture, you can add a tablespoon of pectin to the mixture. Boil for 1-2 minutes and then let cool.

  • 2 lbs roma tomatoes, cored and chopped

  • 2 tbsp apple cider vinegar

Zucchini is my favorite summer vegetable. It is one of the best garden vegetables and grows abundantly for everyone to share. I love how easy this bread is to make and comes together so quickly. This quick bread bakes so well and looks delicious straight out of the oven. The zucchini is a hidden gem that creates a moist and delicious bread.

Top this with a sweet crust after baking and it is to die for. It creates a dessert like bread that everyone loves. Kids love this chocolate zucchini bread recipe and most don’t even know that zucchini is hidden in the bread. It is the perfect combination and loved by all!

Zucchini Bread Ingredients:

It is the perfect afternoon snack, early morning breakfast or a light dessert after dinner. Get your chocolate fix by enjoying this tired and true favorite!

  • All Purpose flour: Helps thicken the quick bread.
  • Cinnamon: Gives a hint of sweet and spicy flavoring.
  • Salt: Just a pinch.
  • Baking Soda: This will help the bread raise.
  • Unsweetened Cocoa Powder: Added chocolate flavoring to the bread
  • Canola Oil: The best type of oil for baking bread.
  • Sugar: Sweet the bread with white sugar.
  • Brown Sugar: Makes the bread moist and sweet.
  • Eggs: Works well with the baking soda and creates a higher rise in the baked bread.
  • Vanilla: Added for flavoring 
  • Sour Cream: Creates a moist and delicious inside.
  • Zucchini: The main ingredient! Fresh is best and shredded then strained from the water.

How to Make Easy Chocolate Zucchini Bread:

It is easy to make and comes together quickly. This bread has the perfect blend of sweet with a healthy and twist of zucchini. Add in the chocolate and be even more amazed!

  1. Prepare Bread Pans: Preheat oven to 350 degrees. Butter and flour a large 9″ bread pan and set aside. Mix topping ingredients and set aside.
  2. Combine Dry Ingredients: Whisk together flour, cinnamon, baking soda, salt, cocoa powder in a small bowl until combined. Set aside.
  3. Mix Together: In a stand mixer or using a hand mixer, beat together sugars, oil, and eggs for about 1-2 minutes until slightly fluffy. Add vanilla and sour cream.
  4. Add in Zucchini: Fold in the grated zucchini. Add the remaining dry flour ingredients. Stir to combine and lastly fold in the chocolate chips.
  5. Pour Bread Batter: Pour into prepared 9″ bread pan. Sprinkle the topping on the top. Bake for 50-60 minutes. I set a time for 45 minutes and mine was done at that time. Oven temperatures vary, so just make sure a toothpick entered in the center comes clean.
  6. Serve When Cooled: Let cool for about 5-10 minutes and remove from pan. Delicious served a little warm, even with a little butter on top.

Preparing Fresh Zucchini:

Fresh zucchini is best when making this chocolate quick bread. I love to have fresh picked zucchini or bought from the store. Either way, this zucchini bread is always a hit!

  • Summer or Fall Season: This bread is best made with the freshest zucchini vegetable. If possible, use a home grown zucchini rather than a store bought zucchini. Zucchini is best picked from the garden in the summer or fall season.
  • Grating Zucchini: Cut the ends off the zucchini and do not peel if you would prefer. Use a grater to grate with the skin on or off. Fresh zucchini is very moist and watery. This will increase the breads moistness as it bakes as well.
  • Drain Moisture: Place the grated zucchini in a sieve or several paper towels. Discard any excess liquid from the zucchini the best that you can. Let it sit while combining ingredients.
  • Dry Zucchini: Add some water to the zucchini to help moisten the zucchini before adding it to the bread batter.

Variations and Substitutions:

Create your perfect bread using these variations and substitutions. Enjoy chocolate zucchini bread just the way you like it!

  • Add Water: If you notice your zucchini is not moist. Either add 1 to 2 Tablespoons to the bread batter or soak the shredded zucchini for a few minutes before adding it to the bread batter.
  • Flour: White flour is best. If you are wanting a whole wheat flour use half and half flour.
  • Cocoa: Make sure to use natural unsweetened cocoa powder to help activate the baking soda. Do not use dutch process cocoa for this chocolate bread.
  • Sugar: Add a little more sugar (3/4 cup) to make a sweeter bread.
  • Yogurt: Substitute sour cream for a low fat plain greek yogurt. Vanilla flavor will also work or non greek yogurt.
  • Chocolate Chips: Add in peanut butter chips or white chocolate chips for a variation. Chocolate chips are a must for this bread to become sweater and more flavorful.
  • Slicing Bread: Let the bread cool before slicing the bread. It is best to slice the chocolate zucchini bread with a bread knife. Slice zucchini bread with a bread knife.

Storing Homemade Zucchini Bread:

There are a few ways to store zucchini bread. The trick is, to try and have left overs. This quick bread goes fast and is a great snack or dessert for everyone around!

  • Storing Chocolate Zucchini Bread: Storing the bread in a ziplock bag at room temperature will work perfectly. This will last about 3 to 4 days long.
  • Freezing a Loaf of Bread: Tightly wrap the zucchini bread in plastic wrap. Place in a ziplock bag and place in the freezer for 1 month. When ready to serve, thaw at room temperture over night. This will last for about 2 to 3 days at room temperature.

  • Design: Prepare the cheesecake in a parchment paper lined 8×8 dish.  Then, after chilling in the refrigerator lift the cheesecake out with the parchment paper and cut the cheesecake into small squares for bite sized treats.  Even dip them in chocolate for a smooth outer shell and professional looking presentation.  Or prepare them in small cups or a mini muffin pan for smaller servings you don’t have to slice.
  • Toppings: Add whipped cream and fresh fruit for extra sweetness and color. Strawberries are a favorite, but raspberries, blueberries, or any fruit that’s in season make great toppings.  Also try sauces like lemon curd, freezer jam, homemade salted caramel sauce, or chocolate syrup.
  • Filling: Add a bit of sour cream for even more tangy flavor and creaminess. Or for a small crunch try adding in some crushed oreos, sprinkles (a hit with kids) or chocolate shavings.
  • Crust: To change up the flavor try using chocolate or cinnamon sugar graham crackers or crushed oreos in the crust.

Yes!  Before decorating, wrap your no bake cheesecake in heavy duty aluminum foil, plastic wrap, or place in a shallow airtight container.  Then store it in the freezer for up to 3 months.  Thaw it in the refrigerator and add toppings before serving.  It will remain good for up to 3 days in the refrigerator.

No Bake Cheesecake is so creamy, luxurious, and surprisingly easy to make from scratch at home.  Top it with whipped cream and fresh fruit and it will be a huge hit that everyone will obsess over!

Ingredients

  • 2 cups graham cracker crushed
  • 1/4 cup brown sugar
  • 1/2 cup butter melted
  • 2 8 ounce cream cheese softened
  • 1 Tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1/2 cup sugar
  • 1 cup heavy whipping cream

  • In a medium sized bowl add the crushed graham cracker, brown sugar, and butter and mix until incorporated. In a 9 inch springform pan add the graham crackers and press firmly into the bottom and sides. Place in the refrigerator.
  • In a large bowl combine the cream cheese, lemon juice, vanilla and sugar. Beat until smooth and creamy. Add in the heavy whipping cream and continue to beat until stiff peaks form.
  • Spread filling evenly along the crust. Chill for 3 hours or overnight and serve with strawberry topping if desired.

I love making crustless quiche for weekend brunches. They are so simple to make. Plus, since there’s no crust, not only is it healthier, but it’s also quicker to prepare. You can mix all the ingredients the night before so it’s ready to bake when you wake up.
