This easy Falafel recipe is made quicker and healthier in the air fryer with canned chickpeas – no deep frying!
Air Fryer Falafel
Falafel is a delicious Middle-Eastern vegetarian dish made with chickpeas, a mix of onions and different herbs and spices. They are shaped like meatballs, but there’s no meat in them. I wanted to create a falafel recipe that was quick and easy, made from canned chickpeas and didn’t require frying. Solution, air fryer to the rescue! You can see more air fryer recipes here!

Kung Pao Tofu, a lighter, healthy (and vegetarian) take on one of my favorite Chinese takeout dishes! So good and loaded with veggies!
Kung Pao Tofu
I love Chinese takeout, but I don’t love all the extra calories. That’s why I like to take classic Chinese dishes and make lighter versions. You should also try my Kung Pao Chicken Zoodles, Orange Chicken and Chicken and Broccoli Stir-Fry makeovers. Kung Pao Tofu would awesome served with my take on Wonton Soup. The only thing better than eating one of your favorite Chinese meals is eating a healthier version so you can enjoy it more often!

Spicy Shrimp Fried Rice
Fried rice is definitely on my favorite foods list, I absolutely love it! Sure, sometimes I go low-carb with Cauliflower Fried Rice, which is fine but when I go all out, I much prefer making it with leftover brown rice (see How To Cook Perfect Brown Rice).

Pumpkin Cream Cheese Muffins are moist, delicious and perfectly spiced! A delicious fall breakfast made with canned pumpkin, pumpkin spice and a cream cheese swirl topping.
Pumpkin Cream Cheese Muffins
These Chocolate Chip Pumpkin Muffins are always such a hit on my blog, I knew I would love this cream cheese swirl version! They take less than 30 minutes to bake and the best part, these pumpkin muffins are under 200 calories! SO much lighter than any bakery or Starbucks muffins. Most pumpkin recipes use at least 1/2 cup butter or oil but these only use 2 tablespoons for the whole batch. Thanks to the canned pumpkin, they are so moist without adding a ton of butter or oil.

This simple Eggplant and Tomato Sauce is delicious, made with diced eggplant stewed in tomatoes and garlic. I love it served over pasta but it’s also great as a side dish on it’s own.
Eggplant and Tomato Sauce
Eggplants, also known as aubergines, belong to the nightshade family of plants and are used in many Italian dishes. They are nutrient dense and high in antioxidants. It’s actually a fruit, and great in so many vegetarian dishes like these meatless Eggplant Meatballs, Eggplant Parmesan and Eggplant Rollatini.

Mashed Cauliflower is essentially a creamy cauliflower puree that makes a delicious low-carb or keto alternative to mashed potatoes.
If you’re not concerned about cutting the carbs, it’s also just a delicious way to prepare cauliflower and makes a great side dish to accompany any roast or chop like Garlic Lover’s Roast Beef, Pork Chops with Dijon Sauce or Rosemary and Lemon Roasted Chicken.
