The Best Margarita Recipe

Whether on the rocks or blended, this is the best recipe for the classic margarita that everyone loves. It’s perfect for any and every occasion!

It’s easy to buy a margarita mix, but to be honest they’re often overly sweet and they definitely don’t taste fresh like homemade margaritas from scratch!

We love this recipe because it’s just a few ingredients and a couple of steps, perfect for picnics, barbecues, and long, sultry days by the pool!

What’s in a Margarita

The most important ingredient in a margarita is always the presentation!

ALCOHOL Good quality tequila and triple sec are all that’s needed!

FRUIT This recipe is full of lime flavor. It’s definitely worth using fresh limes, bottle juices tend to have a bitter flavor.

ICE Ice cubes can be left whole for an on-the-rocks style or crushed into a blended margarita!

Why not try a pitcher of strawberry, mango, or even sunny orange margaritas alongside this classic? Or try watermelon, sour cherry, even cranberry!

How to Make Margaritas

It’s as easy as 1-2-3 to make a pitcher of margaritas!

  1. Rub lime on the rim and dip in coarse salt. Place margarita glasses in the freezer while you prepare the cocktail (optional).
  2. In a shaker add ice, tequila, lime juice, and triple sec per recipe below (you can add a splash of agave to sweeten if you’d like). Shake for at least 30 seconds.
  3. Pour drink into prepared glass with ice, garnish and serve.

For a Blended Margarita

  1. Blend all ingredients on high until foamy and frothy (feel free to add frozen fruit to the mixture if you’d like). Double or triple the recipe if desired!
  2. Pour into prepared glasses and serve!

Margarita Recipe

Ingredients

  • 2 ounces tequila
  • 1 ounce lime juice must be fresh
  • 1 ounce triple sec or cointreau
  • coarse salt
  • ice
  • limes

Instructions

  • Rub the edge of a glass with a lime slice and dip into coarse salt (optional). Place in the freezer while preparing the drink if desired.
  • Fill a cocktail shaker with ice and add tequila, lime juice and triple sec. Shake very well (for at least 30 seconds) to chill drink.
  • Add ice to the prepared glass. Strain margarita mixture over the ice.

Homemade Salsa – Takes 5 Minutes to Make!

This homemade salsa recipe is the perfect homemade version of a restaurant-style salsa and it takes just minutes to make!

Full of flavor and needing just a handful of ingredients this is the best dip for tortilla chips (with some guacamole of course) and a great topping for tacos!

The Best Homemade Salsa

I really think the best part of going to a Mexican restaurant is the chips and salsa they serve you when you sit down.  It doesn’t hurt that it’s usually paired with a margarita and great friends…  but really, there is something about that delicious restaurant-style salsa! Honestly, once you learn how to make homemade salsa, you’ll never go back to jarred again!

Ingredients

Tomatoes, onions, and hints of lime, cilantro, and cumin. That’s literally all you need to whip up a great blender salsa!

I prefer the flavor of canned whole tomatoes and they seem to have a thicker consistency than diced or fresh.

TO MAKE HOMEMADE SALSA

  1. Add ingredients to a blender or food processor.
  2. Pulse to combine.

That’s it. So easy.

Tips For Perfect

Salsa is SO easy to make at home.  Here are a few of my favorite tips to make this recipe perfectly delicious!

BLENDER/FOOD PROCESSOR

Use Pulse: I make this in my blender or food processor if you prefer, just pulse to reach desired consistency.  It only takes a few seconds and you don’t want to make it too runny!

For Thicker Salsa:  If you’d like your salsa to be a little bit thicker, remove some of the juice from your canned tomatoes and set it aside.  You can always add a little bit back in if you’d like.

FLAVOR

To Adjust the Spice Level: The seeds/membranes in the jalapenos holds the heat.  For a milder salsa, remove all of the seeds and membranes, for a spicy salsa, leave them in! Replace with green chiles for a milder flavor.

Allow Flavors to Blend: Once combined, this salsa is best if the flavors have time to blend.  Place in an airtight container or cover with plastic wrap and refrigerate at least 1 hour before serving.

This homemade salsa will last for about 10 days in the fridge. You can freeze leftovers.

Ingredients

  • 28 ounces whole tomatoes with juice *see note
  • ½ cup cilantro fresh, chopped
  • ¼ cup onion chopped
  • 1 jalapeño chopped
  • ½ lime juiced
  • 1 clove garlic minced
  • ½ teaspoon cumin
  • ¼ teaspoon salt

Instructions

  • Add all ingredients to a food processor (remove ½ cup juice from the tomatoes if desired). Pulse 4-6 times to get desired consistency.
  • Refrigerate 1 hour before serving.

Notes

For a thicker salsa, remove 1/2 cup of the juice from the canned tomatoes before combining ingredients. Diced tomatoes do work in this recipe too.

MAYONNAISE You can use store-bought mayonnaise or make your own homemade mayonnaise.  Light or regular will both work great!

SPICES Garlic, onion powder, and cumin are mixed in with the mayo to give it that savory flavor!

CHIPOTLE Bring on the heat! Chipotle peppers finely minced. Chiptole powder will work in a pinch.

VARIATIONS If there’s no chipotle powder or peppers, then use sriracha or chop up some jalapenos! Add as much or as little heat as you can handle.

How to Make Chipotle Aioli

This is so quick, it’s ready in 1,2,3!

  1. Mash garlic with salt until it forms a paste.
  2. Add mashed garlic to a bowl with remaining ingredients (per recipe below).
  3. Season with salt and pepper and keep refrigerated.

How to Store

  • Store chipotle aioli in an airtight container or a mason jar. It should last about a week. Before using aioli, give it a shake or a stir.
  • Add this aioli to marinades, or even to soup, stew or stock! Really great in a pot of mashed potatoes, too!

An Easy Dressing (or Marinade)

Cilantro and lime go together like… well, cilantro and lime. They’re perfect together in everything from cilantro lime chicken to cilantro lime rice! Spoon it over salads instead of vinaigrette, drizzle it over chicken kabobs, or add to guacamole for a fun twist.

Ingredients in this dressing are simple and if you’ve got cilantro, you most likely have everything else on hand!  Cilantro, lime, honey, garlic, and olive oil. I add a little dash of cumin (or chili powder).

How to Make Cilantro Lime Dressing

This salad dressing can be made in a few different ways. Chop the cilantro and whisk the ingredients slowly adding in the oil if you don’t have a blender.

You can blend all of the ingredients at once for an oil and vinegar type dressing or slowly drizzle in the oil with the blender running to create a bit of a creamier dressing.

  1. Place all ingredients in a blender, except for oil. Turn on and slowly add oil.
  2. Pulse and blend until creamy smooth and thickened.
  3. Option: Add 1/2 a ripe avocado for a creamier dressing.

If you want to keep some flecks of green, don’t blend too long.

Delicious Variations

Cilantro lime dressing will accommodate a host of variations. This recipe also makes a great marinade for grilled chicken!

  • Want a little heat? Add some jalapenos or red pepper flakes to the blender.
  • Lemon juice could substitute for the lime in a pinch.
  • If you don’t have any honey on hand, agave or sugar will fit the bill.
  • Toss in two or three small chunks of avocado if you want to tame the tanginess and add some instant thickening and creamy richness.
  • A tablespoon or two of Greek yogurt would give it some extra creaminess.

How Long Will Cilantro Lime Dressing Last?

Cilantro lime dressing should last about five days in the refrigerator. The acidity of the lime juice helps preserve it, but the flavor will dissipate over time.

  1. Marinate chicken thighs in a zip-top bag.
  2. Bake or grill.
  3. Add more lime and cilantro and serve immediately.

Ingredients

  • 2 lbs chicken thighs bone-in, skin-on
  • 2 limes juiced (about 1/4 cup)
  • 1 lime zested
  • 1/4 cup cilantro fresh, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  • Add chicken thighs to a large zip-top bag.
  • In a small bowl whisk together lime juice, lime zest, cilantro, chili powder, cumin, kosher salt, black pepper, and red pepper flakes.
  • Pour marinade into the bag with the chicken and let marinate at least 30 minutes or up to 2 hours.

To Bake

  • Preheat oven to 425°F.
  • Heat an oven proof skillet over medium high heat. Add the chicken skin side down (reserve the marinade) and cook 3-4 minutes or until browned. Flip over and cook 2 minutes more.
  • Add remaining marinade to the pan. Bake 20-25 minutes or until chicken reaches 165°F. Broil 2-3 minutes to crisp if desired. Serve over rice.

To Grill

  • Preheat grill to medium heat.
  • Cook chicken skin side down on an oiled grate for 15 minutes. Turn over, baste with marinade.
  • Cook an additional 20-30 minutes continuing to brush with marinade (chicken should reach 165°F). Rest 5 minutes before serving.

Notes

  • Allow chicken to marinate at least 30 minutes.
  • Fresh lime is best in this recipe, the flavor of bottled lime can be bitter.

Carne Asada Recipe (Marinated Flank Steak)

Carne Asada is a tasty Mexican-style steak recipe! Flank steak (or skirt steak) is marinated in an easy citrus garlic marinade and grilled to juicy perfection! 

Slice into strips and serve with tortillas and your favorite toppings for a meal everyone will love!

What is Carne Asada?

I can never get enough Mexican food; from tacos and burritos to fresh pico de gallo and of course this recipe! Carne asada translates to “grilled beef” and in this recipe, it is marinated in a flavorful citrus mixture.

Carne Asada Marinade

The key to a tender carne asada is the marinade (and slicing the beef properly, more on tht below). The acidity in the marinade tenderizes the meat and gives the most delicious flavor! Allow at least a few of hours marinating time but overnight if you can!

    • Lime Juice and orange juice add acidity for tenderizing and lots of flavor
    • Soy Sauce adds salt and a nice savory flavor
    • Garlic adds flavor, I add 3 cloves but add more if you’d like!

Beef for Carne Asada

One of the reasons carne asada is so popular is because you can use a less expensive cut of meat, usually a skirt steak or a flank steak. You can, of course, use your favorite cuts, we sometimes use rib steak.

The marinade makes all the difference. It both tenderizes the meat and brings a savory flavor during the grilling process.

Most importantly, be sure to slice your beef against the grain. You will see long fibers in the meat, cut across the fibers for tender beef. If you cut with the fibers, you will get tough chewy meat.

To Make Carne Asada

  1. Marinate the flank steak (or steak of your choice) at least four hours or overnight per recipe below.
  2. Preheat the grill to medium heat and grill the marinated steak.
  3. Rest and slice the steak across the grain.

Serve as steak tacos, burritos, fajitas, or just serve over my favorite version of Mexican rice.

To Serve

This is the fun part! Set out toppings so everyone can build their own! Serve with warmed corn or flour tortillas and this delicious Mexican Corn salad.

TOPPING IDEAS

  • Sauces: Salsa, Guacamole, Sour Cream, or Pico de Gallo.
  • Crunchy Veggies: Sliced or diced Onions, cooked and diced potatoes, shredded cabbage,  or shredded lettuce.
  • Other Veggies: Sliced avocados, sliced black olives, diced tomatoes, and sliced jalapenos!

  • Slice steak across the grain and then cut into small pieces. Fill warmed tortillas with steak, pico de gallo, onion and guacamole.

Pico De Gallo (Easy to Make!)

Pico de Gallo is a fresh salsa with juicy ripe tomatoes, onions, lime juice, and a hint of heat from jalapenos!

What is Pico De Gallo?

Pico de gallo is a type of fresh salsa (also known as salsa fresca). Tomato, onion, fresh lime and salt bring it all together.

Pico de Gallo vs. Salsa Pico de Gallo is not cooked or blended like restaurant style salsa, it is served fresh with large chunks and less liquid. The ingredients fresh, ripe and serve raw (which is why it’s ).

Ingredients for Fresh Salsa

TOMATOES
As these are the base of this recipe choose the ripest tomatoes you can find. Any kind works from Roma to cherry tomatoes.

ONIONS
Fresh white onion is added. If you find it too strong in flavor, chop it and soak in cold water (rinsing a couple of times). I use this same method when making fajitas to take a bit of the bite out of the onion.

JALAPENO
Fresh jalapeno adds a bit of heat to this recipe. If you’d like a milder salsa, be sure to scrape out the seeds and membranes before dicing.

CILANTRO
This is an ingredient people tend to have a strong opinion about! I personally love it and it truly makes the flavor of this dish. If you absolutely cannot eat cilantro, you can leave it out.

LIME, SALT 
Let the tomatoes and onions shine. Just a squeeze of lime and a bit of salt is all that’s needed.

How To Make Pico De Gallo

To make this pico de gallo recipe:

  1. Chop Finely: Dice the tomatoes and drain while the rest of the ingredients are prepared to remove excess juices.
  2. Combine: Add all ingredients with the tomatoes to a bowl, and toss to combine.
  3. Rest: Allow pico de gallo to sit for at least 20 minutes before serving for the flavors to blend.

Optional Add-Ins

Here are some fresh and delicious additions to pico de gallo:

  • Avocado – for a creamy addition
  • 2 cloves fresh garlic – finely minced
  • Red onion – substitute for white onion
  • Red, yellow, or green peppers – finely diced
  • Cucumbers – finely diced, seeds removed
  • Mango – turn this into a mango salsa by replacing tomatoes with mango or pineapple

Leftovers?

This will last about 24-48 hours in the fridge. After that it will still be fine to eat but will get a bit wilted.

Pico de gallo is loaded with delicious fresh ingredients and ripe tomatoes. As you might suspect, freezing this recipe will change the texture so I highly recommend enjoying it fresh if possible.  If you do have leftovers that you need to freeze, rather than scooping it up with chips, it makes an excellent addition to soups, stews or chili while cooking!

Serve Pico de Gallo with…

Spoon it over enchiladas, serve it with tacos (chicken, shrimp or beef).

Add a bowl next to a plate of loaded nachos. It’s fresh, it’s delicious and it goes with pretty much anything!

Ingredients

  • 1 ½ pounds ripe tomatoes diced

Classic Cosmopolitan Cocktail Recipe

A Cosmopolitan Drink is perfect when you want to serve a really classy cocktail with some sweetness and holiday color to it! Triple sec orange liqueur, shaken not stirred with cranberry juice, fresh lime and vodka… ah, what could be better?

A tasty cocktail needs great ingredients and a good recipe to get the proportions right. It’s important when making classic drinks like the Martini, Mojito, or Moscow Mule, to measure correctly and then tweak if you’d like.

Fortunately, it’s not at all hard to mix and measure perfectly. We’ve got you covered.

What’s in a Cosmopolitan?

Just a few easy to find ingredients and you’ll have the perfect cosmopolitan in hand!

  • Vodka – Use Vodka Citron if desired or go for Tito’s!
  • Triple Sec – This is an orange flavored liqueur and it adds a bit of sweetness. Sub in a splash of cointreau (you won’t be sorry you spent the extra, it’s delicious) or even grand marnier. Stay away from artificial curacaos in brightly dyed colors. They can pack a wallop, and not in a good way!
  • Cranberry Juice – Try 100% cranberry juice or good old “cranberry juice cocktail” will do just fine for a sweeter cosmopolitan drink.
  • Lime Juice – Squeeze limes or juice them, but whatever you do, don’t use lime juice concentrate as you find in those little green lime shaped bottles! If you ever try them side by side, you’ll never buy those bottles again!

Shaken vs Stirred?

The endless debates about whether to shake or stir, stir or shake…are frankly a bit pretentious.

  • Shaken: If you like a drink frosty cold, shake it in ice, and strain quickly so it doesn’t get diluted. Add salt later… if putting a teensy bit of salt in cocktails is even your thing.
  • Stirred: Stirring is great if you are very particular about your drinks not getting the least bit cloudy or the tiniest bit diluted.

Personally, I love cocktails icy cold so I say…shaken, not stirred!

How to Make a Cosmopolitan

Start by getting your martini glass frosty in the freezer! Then start prepping your classic cocktail.

  1. Fill a cocktail shaker with ice. (If you don’t own a cocktail shaker, a very clean travel mug with a lid and spout does the job perfectly!)
  2. Add all the ingredients and shake like crazy until frosty cold. Strain into a frosted martini glass and garnish as desired. That’s all there is to it!

To prepare batches ahead of time:  Mix all of the ingredients in a container with a using 1 cup vodka, 1/2 cup triple sec, 1/2 cup cranberry juice and 1/4 cup lime juice. To serve, pour each serving into a martini shaker and shake until icy cold. Strain into a martini glass and serve.

  • 2 oz vodka
  • 1 oz triple sec

What is in a Moscow Mule?

There’s just a few ingredients in a Moscow Mule, and none of them are hard to find!

  • Vodka. I recommend using quality vodka. After all, if you are going to all the trouble of planning perfect cocktails, why not go for the gold?
  • Lime Juice is pretty self-explanatory, but you’ll definitely want to squeeze your own lime juice for this cocktail. Choose between key limes for a tangy bite, or Persian limes for a milder mule that won’t kick quite as hard!
  • Ginger Beer is not to be confused with ginger ale, it’s mild mannered, non-alcoholic cousin. Ginger Beer can be fairly mild but sometimes it can have some serious attitude. Try out different kinds to find your favorite, you’d be surprised how much they can vary!

  1. Fill a copper mug with ice.
  2. Add ingredients (recipe below) and give a stir. Not too much, you’ll want to ginger beer nice a fizzy!
  3. Garnish with lime wedge and fresh mint leaves.

Key Lime Pie

With summer in full swing, no-bake desserts are our favorite. They are so easy to make and always a crowd pleaser for kids and adults alike. No bake desserts are always a winner, especially this key lime pie recipe. The cheesecake filling, from the zest and juices of the lime, combined with the sweetness of the condensed milk gives the pie so many amazing flavors in every bite.

Whenever I make this easy key lime pie recipe, we barely give it enough time to set and it’s gone. It’s one of our favorite summertime desserts! And since it is a no-bake dessert, it’s basically foolproof.

How to Make No Bake Key Lime Pie

CRUST: Though you can substitute store-bought crust, this homemade crust is extremely easy to make (and kids love helping).

  1. Crush graham crackers in a zip top bag with a rolling pin or a food processor.
  2. Stir in butter and press crumb mixture into the bottom and sides of the pan.

FILLING: This easy filling is made with just 5 ingredients!

  1. Combine filling ingredients until creamy and spread evenly over crust.
  2. Top with lime zest, whipped cream or lime slices.

Allow the pie to chill at least 4 hours in the refrigerator or overnight before serving.

TIPS: Add parchment paper to the bottom of the pan for neater and easier removal of pie pieces. For clean slices, run the knife under warm water after each cut.

How Long Will It Last

The pie may be kept covered and refrigerated 2-3 days. The crust will get softer the longer it’s stored.

If freezing, this pie will last well for up to 2-3 months. Thaw the frozen key lime pie overnight in the refrigerator and top with the desired garnish before serving. This key lime pie dessert is a great option to make and freeze if you’re prepping for a party and want to start baking early.

TIP: Frozen key lime pie is also a great option to serve partially frozen during the hot summer days for a cool treat and is always a hit at parties!
