What Kind of Pork for Pulled Pork?

You’re going to want a pork roast that is well marbled and has lots of fat and collagen.  While many people use a tenderloin for pork roast, I find it too dry and tough and much prefer to roast a pork tenderloin until juicy! The perfect cut of pork is a pork shoulder which goes by many other names. You may also see it labelled as:

  • Picnic Roast
  • Boston Butt
  • Blade Roast
  • Shoulder Butt
  • Pork Butt

20 Minute Broccoli Cheese Soup

Broccoli Cheese Soup is one of our favorite quick and easy meals any time of year!  Perfect for lunch, or an easy weeknight dinner with salad and loaf of french bread.  The best part is that this broccoli cheese soup is ready in 20 minutes start to finish!

Bowls of creamy Broccoli Cheese Soup on a table.

Broccoli Cheese Soup From Scratch

This Broccoli Cheese soup is one of our favorite quick weeknight meals!  There’s just something amazing about a hearty bowl of soup in your belly to warm you from the inside out.. and even better when it takes just minutes to make!

If you’ve ever been to Panera, you likely know that the Panera broccoli cheddar soup is so hard to resist! Rich, creamy and oh so cheesy, I definitely needed to come up with a yummy homemade version.

I love knowing that I can make a recipe from scratch using fresh ingredients in about  20 minutes; perfect for a weeknight dinner! We serve it with a side salad and bread for a complete meal! This soup is also amazing served in a bread bowl (and it reheats beautifully for lunches).

A spoonful of cream of broccoli cheese soup in a while bowl.

How Do You Make Broccoli Cheese Soup?

This broccoli cheese soup is made without Velveeta and instead is loaded with lots of real cheddar making it rich, velvety and satisfying!

  1. Using a sharp cheddar adds extra cheese flavor to this recipe.  I love to use a sharp cheddar for a nice strong flavor, but you can use any kind of cheese you like. Gruyere is also wonderful in this broccoli cheese soup!
  2. You’ll note that the cheese is added in once the soup is removed from the heat.  If cheese (or dairy) boils it can separate leaving a less than desirable texture.  The soup should be plenty hot enough to melt the cheese to a perfect velvety consistency.
  3.  Fresh broccoli gives the best results in this recipe, frozen can certainly be substituted if that’s all you have on hand. Instead of blending all of the veggies, I chop some and add them in after the soup is blended. This adds some extra flavor to the soup.
  4. When blending this recipe, you can use a typical blender (be sure not to have the lid on tightly or it can explode from the steam) but I find an inexpensive immersion blender or hand blender works perfectly plus you can do it right in the pot (less dishes is always a win in my books)!
  5. To make a skinnier version of broccoli cheese soup, you can substitute the cream with evaporated milk and use a light cheddar (sharp is still best for flavor).  We top it with a sprinkle of pepper and sometimes a little dollop of sour cream.

5 Other Irresistible Soups You Need to Try

  1. Easy Hamburger Soup: Loaded with vegetables, lean beef, diced tomatoes and potatoes.  It’s great made ahead of time, reheats well and freezes perfectly.
  2. Chinese Beef & Broccoli Soup Tender beef, paired with broccoli in a rich spicy, flavorful broth. This soup totally hits the spot!
  3. Crock Pot Ham and Bean Soup:  This “no-soaking required” Ham and Bean soup takes just minutes to prepare and cooks effortlessly in your Crock Pot all day long!
  4. Weight Loss Vegetable Soup: Completely loaded with veggies and flavor and naturally low in fat and calories it’s the perfect lunch, snack or starter!
  5. Slow Cooker Bacon  Corn Chowder: Fresh vegetables, chunks of tender potato, and smoky bacon add so much flavor while the creamy corn base adds a touch of sweetness.  The perfect cool weather soup!

Broccoli Cheese Soup ready to serve - this takes just minutes to prep!

Can you Freeze Broccoli Cheese soup?

Diary doesn’t tend to freeze well and it can sometimes become grainy or the texture can change slightly.  I would suggest keeping this broccoli cheese soup in the fridge for up to 4 days.  To reheat it can be microwaved stirring occasionally or heated on the stove over medium-low.

What Goes Well with Broccoli Cheese Soup?

We most often eat this broccoli cheese soup for lunch or a quick easy weeknight meal.  I like to add a side of 30 Minute Dinner Rolls to dip into the soup and sop up any dribbles left in the bottom of my bowl!  It’s great served with a fresh garden salad on the side.

While most people think it is a grain, Quinoa is actually a seed and is prepared in a similar way to rice or barley. It has a slightly nutty flavour which can be served plain or you can add it to salads or even replace the noodles in soup like Homemade Chicken Noodle Soup.

It is gluten-free which makes it a popular choice for folks who either have a gluten intolerance or allergy (ensure your brand specifically lists that it is GF).

Easy Banana Bread Recipe

This Easy Banana Bread is one of those recipes that I’ve made about a million times! Learn the trick to how to make banana bread extra moist and delicious.

With very few ingredients and only a few minutes of prep, this simple banana bread is the perfect way to enjoy your ripe bananas!

sliced banana bread made from easy banana bread recipe

This banana bread recipe is so quick and easy to prepare, that it’s perfect for busy households! And it makes a most delicious afternoon snack for hungry kids after school or an quick and easy breakfast paired with a warm mug of coffee!

Banana bread is the perfect way to use up bananas that are too ripe to enjoy eating anymore. And in fact, more ripe is even better! This makes the banana super easy to mash and sweet in flavor. A great muffin recipe that uses mashed bananas is my Banana Nut Crunch Muffins. So delicious!

This Easy Banana Bread recipe is one of the more moist banana bread recipes I’ve ever tried. Not only is it quick and delicious, it turns out perfectly every single time (just read the reviews below)!

A sliced loaf of banana bread made from an easy banana bread recipe

How to Make Banana Bread

This extra moist banana bread recipe is one of the easiest you’ll ever make.  You’ll simply take your dry ingredients and mix them with bananas (of course), mayonnaise and egg.

I make a Chocolate Mayonnaise Cake which is to die for. If you have never had a bread or cake made with mayonnaise before, you MUST try it.  I know it may sound a little bit strange, but mayo is made of oil and eggs which are basically staple ingredients in this quick bread anyhow. This is how to make banana bread soft and moist. The result is the most crazy moist bread!

Butter melting over banana bread from a moist banana bread recipe

How to Make Banana Bread Moist

How Ripe Should Bananas Be for Banana Bread? You want your bananas to be ripe with many black spots, this means they’re soft and full of sugars.  Don’t let them get so ripe that they’re seeping liquid though. If you’re not going to get to your bananas before you  have a chance to use them, peel them and freeze them.  Just remember when you defrost them, put them in a bag or shallow dish because they will sweat and leak.

Tips for Moist Banana Bread

  • The batter to this recipe is very thick and you may be tempted to add more liquid… trust me, you don’t need it.  This bread is perfect just as it is.
  • The key to making good quick breads is do not overmix.
  • I love pecans in my banana bread but you can also use walnuts in this recipe or make Chocolate Chip Banana Bread by adding chocolate chips.
  • Once cooled, serve it with Whipped Strawberry Butter, top it with an amazing Pecan Coconut Glaze or just keep it simple and spread it with a bit of butter.

Quick breads can sometimes be difficult to remove from the pan. A trick I have learned is to line my loaf pan with parchment paper leaving about 3 inches of paper folded over the top of the pan. This makes is super easy to hold onto and lift the loaf easily, and in one piece, out of the pan. Drop onto a cooling rack to finish cooling or straight onto a breadboard to slice and enjoy!

How to Store Banana Bread

I much prefer to store this banana bread recipe on the counter, I find that refrigerating quick breads dries them out.

How long does Banana Bread last? In my house, about an hour and a half. Joking aside, banana bread should last about 3 days tightly sealed on the counter.

Can You Freeze Banana Bread? Yes, of course, this easy banana bread freezes beautifully.  You can either freeze the loaf as a whole or slice it and freeze the slices. To defrost a slice just pop it in the microwave for a few seconds or even just add it to the lunch box frozen, it’ll defrost in plenty of time for lunch!

Tomato Salad

This is my husband Tommy’s favorite summer meal, especially on those nights it’s too hot to cook. We get a loaf of crusty bread, sometimes we even toast it and rub a raw garlic clove on the bread. Then eat the tomatoes and let the bread sop up all those delicious juices at the bottom (so good you’ll want to drink it!). Of course, the bread is totally optional here!
