I love adding pomegranates to my salads, they are  juicy with a slight pop when you bite into them! I usually bring this salad to potlucks or parties because it’s so colorful and easy to whip up, and I always get compliments! A simple yet elegant fall or winter salad, perfect to serve as a first course for the holidays, or a simple side dish or lunch.

My husband Tommy claimed this to be the BEST breakfast casserole recipe he’s ever tasted. In fact, he loved it so much he reheated the leftovers the next morning! What he loved most was the texture of the eggs. They are fluffy and light – almost custard-like thanks to adding a little heavy cream. I’m not a fan of spongy eggs and love the texture of this crustless quiche, so I took inspiration from that recipe.

The filling requires no baking, it’s set with gelatin so if you wish to make this a no-bake pie, you can also use a ready-made graham cracker crust. This was so delicious I had to get it out of my house, as I tested it a few times to get it just right! If you have been following me, you probably know how much I love pie, it’s my favorite type of dessert and the only sweets I really crave. Some other pies I love are this Peanut Butter Pie and this Mixed Berry Pie.

Spinach and Ricotta Quiche and Chicken Quiche are so popular on my site, but I often get asked how to make it crustless. For this low-carb version, I made this with no crust, and added lots of broccoli plus I used some light cream to give the eggs more of a creamier custard texture, as most quiches have rather than a spongier baked egg texture. This turned out delicious!
