What he loved most was the texture of the eggs. They are fluffy and light – almost custard-like thanks to adding a little heavy cream. I’m not a fan of spongy eggs and love the texture of this crustless quiche, so I took inspiration from that recipe.

This quiche is keto, gluten-free and easy to make! Add a salad on the side and it’s the perfect light meal. Of course, you can use any cheese you wish here, or leave the ham out like I did in this Crustless Broccoli and Cheddar Quiche. This easy Key Lime Yogurt Pie is a cross between a key lime pie and a key lime cheesecake with a light, creamy filling that is sweet and tart, made with key lime juice, yogurt and cream cheese in a graham cracker crust.

The filling requires no baking, it’s set with gelatin so if you wish to make this a no-bake pie, you can also use a ready-made graham cracker crust. This was so delicious I had to get it out of my house, as I tested it a few times to get it just right! Spinach and Ricotta Quiche and Chicken Quiche are so popular on my site, but I often get asked how to make it crustless. For this low-carb version, I made this with no crust, and added lots of broccoli plus I used some light cream to give the eggs more of a creamier custard texture, as most quiches have rather than a spongier baked egg texture. This turned out delicious!
