Try this traditional Shepherd’s Pie!

Shepherd’s Pie is a traditional Irish dish made with a saucy ground lamb (or beef) base, peas, and carrots and topped with a mashed potato crust. Easy and tasty, all year round!

What is Shepherd’s Pie?

Shepherd’s Pie is a delicious combo of ground lamb (although many people use beef) that has been cooked with carrots, sweet green peas and corn in a gravy or sauce. The lamb mixture is then topped with a crust of creamy mashed potatoes.

This casserole traditionally made with ground lamb.  Many people make this recipe with ground beef however, if you use ground beef it’s actually called Cottage Pie! (You can also replace the meat for a vegetarian lentil version).Either way, this crustless meat pie is topped creamy mashed potatoes and baked until bubbly.

Do you put cheese on top of Shepherd’s Pie? Traditionally, a Shepherd’s Pie is not topped with cheese, but as you all know, cheese is my love language. You can add a sprinkle of cheddar cheese on top of the mashed potatoes or just brush them with a little bit of butter before baking.

Ingredients for shepherds pie like mashed potatoes, meat sauce, and veggies.

Shepherd’s Pie can be prepared fresh but it’s also a great way to use up any leftover meat, veggies, gravy or mashed potatoes.

    • MEAT Lamb is traditional but you can use any ground meat in this recipe (I most often use ground beef). Leftover roast works too!
    • VEGGIES Frozen mixed vegetables make prep quick and easy but leftover roasted veggies work perfectly too. If using fresh, steam them until tender before adding.
    • SAUCE Shepherd’s Pie is so versatile, I’ve given a couple of shortcut sauces in the recipe below but you can use leftover gravy (or gravy mix), tomato sauce… the sky is the limit here.
    • POTATOES Traditional mashed are what I most often use but garlic mashed potatoes add great flavor to this dish! If you are in a hurry, you can use store-bought mashed potatoes

Prep Ahead and Tips for Shepherd’s Pie

You will love how easy and convenient this dish is.  It can be made a day in advance, which makes dinner prep easier.

  • Layering After prepping the meat mixture, let it cool and then chill it in the fridge for 20 minutes.  This will help keep the mashed potato layer separated.
  • Prep Ahead Prep and assemble up to one day in advance and refrigerate. Let it come to room temperature 30 minutes before baking it.
  • Quick Clean Up If your baking dish is very full, place it on a parchment lined baking sheet to avoid any juices spilling in your oven.
  • To Freeze Before Baking
    • Cool completely. Wrap tightly in plastic wrap and then in foil. Freeze.
    • Thaw overnight in the fridge. Bake for 45 minutes covered and 15 minutes uncovered

Shepherd's Pie with peas, carrots, mashed potatoes and cheese on a wood ladle

Why is it called Shepherd’s Pie?

Originally a meat pie made with minced (or ground) meat and mashed potatoes was known as a Cottage Pie (and it was even sometimes made with pastry many years ago). It is very popular in Ireland, Scotland and England as well!   In the late 1800’s the pie was named Shepherd’s Pie if made with lamb (since the shepherd looked after the sheep) and if  made with beef it was called Cottage Pie.

Regardless of the name, this recipe is a classic Shepherd’s Pie recipe loaded with flavor and the perfect make ahead meal to serve all year long!

Pasta Fagioli Soup

This Pasta Fagioli recipe is a hearty classic Italian soup that’s comforting, and takes less than an hour! It’s filled with veggies and spicy sausage meat cooked in a hearty and rich tomato broth.

There is nothing more comforting and soul-warming than Pasta e Fagioli!

A bowl of pasta fagioli soup next to the pot and a spoon.

In this easy homemade soup recipe, two types of beans have been added for extra protein and creaminess. Lots of dried herbs make the broth for this easy Pasta Fagioli recipe irresistibly flavorful.

What is Pasta Fagioli?

Pasta e Fagioli means “pasta and beans.” A traditional Italian pasta fagioli recipe is a classic dish, made with easy to find, affordable ingredients.

Minestrone Soup vs. Pasta e Fagioli Soup

The main difference between minestrone and pasta e fagioli is the varation of vegetables in minestrone. Fagioli is mainly pasta and beans in a broth (I add a few veggies like celery & onion for extra flavor).

Ingredients like beans and carrots being added to fagioli soup.

How To Make Pasta Fagioli

I make a lot of amazing soup recipes and this flavorful one, tops our list! it’s easy, delicious and hearty (and we think it’s even better than the Olive Garden Fagioli recipe)!

  1. Brown sausage and onions.
  2. Add in Remaining ingredients except pasta and simmer for 10-15 minutes.
  3. While the soup simmers, cook pasta until al dente.
  4. Stir pasta into the soup, and serve with your favorite toppings.

Serve pasta fagioli soup next to some warm garlic bread and a caesar salad for the perfect meal!

CrockPot Conversion

This recipe converts to slow cooker super easily! Just follow these steps:

  1. Brown sausage and add to a slow cooker along with the rest of the ingredients, except for the pasta.
  2. Cook on low for 7-8 hours or high for 3-4 hours.
  3. 20 minutes before the time is up, stir in cooked pasta.

Pasta being stirred into fagioli soup with a ladle.

You can make a vegetarian Pasta Fagioli soup recipe by skipping the sausage, and you can also use whole wheat pasta for an extra nutritious kick!

Can You Freeze Pasta Fagioli Soup?

If you intend to freeze this soup, make sure the veggies are still crunchy, otherwise, they will retain their crunchiness after defrosting/reheating the soup.

  • Cool soup completely before packaging it for freezing.
  • Add soup to a gallon or quart-size zip-top plastic freezer bags.
  • Lay bags flat in a single layer in the freezer, when frozen, stack bags to save space.
  • Freeze for up to 3 months.

Beef Taco Casserole

Scoop of beef taco casserole in baking dish

Beef Taco Casserole is a fun twist on taco night, and is a great way to feed a crowd or hungry family! A mixture of seasoned ground beef and black beans is mixed with salsa and cheese, then baked until hot and bubbly for the perfect taco inspired meal.

Add your fave toppings; shredded lettuce, chopped tomatoes, sliced black olives, jalapeño slices and more! My favorite topping is some crunchy Fritos corn chips… it gives this taco meat casserole a “walking taco” feel, which my kids just love!

What is a Taco Casserole?

It’s everything you love about tacos, but in a super-comforting casserole form, an easy taco bake.

I just love taco casserole recipes with ground beef, so my version uses ground beef, and that 1 pound of meat is stretched further by using black beans as well.  Normally I use a package of taco seasoning, but homemade taco seasoning really takes this to a new fabulous level!

Swap it Up

This recipe can be changed based on what you have on hand. Any ground meat will work (like chicken or turkey). Add in some diced veggies or peppers or swap out the salsa for enchilada sauce. Pretty much anything goes!

How to Make Taco Casserole

It seems like every region here in the U.S. has a type of food that it’s known for.  Here in the Midwest, I think if there’s one thing we’re known for, it’s a comforting casserole.  Of course, other places in the country serve up casseroles too, but Midwesterners will turn anything and everything into a casserole!

This dish needs just a few easy steps:

  1. Brown beef and drain fat. Stir in beans and sauce mixture.
  2. Pour into a casserole dish, top with cheese.
  3. Bake until bubbly and melted.

It’s that easy! Next top with your favorite toppings and serve!

To Make it Healthier

With a few substitutions, you can easily turn this into a healthy taco casserole!

  • Swap regular ground beef for extra lean ground beef, or even ground turkey will lighten up this taco casserole.
  • Use reduced-fat shredded cheese.
  • Use reduced-sodium ingredients.
  • Add diced or shredded veggies to the meat as it cooks.
  • Top the casserole with fresh veggies (lettuce/tomatoes) for serving and swap out the sour cream for plain Greek yogurt!

Can You Freeze Taco Casserole?

Yes!  This bean and beef taco casserole freezes beautifully, which makes it great for meal prepping, or even making a meal for a sick friend.

To thaw, just set the casserole in your refrigerator overnight, and by dinner time the next day, it should be fully thawed. Full freezing instructions are below the recipe at the end of the post!

To Freeze Taco Casserole

TO FREEZE Cook beef mixture in skillet and assemble in baking dish, omitting 1 cup remaining cheese on top. Cool completely and cover tightly with plastic wrap and aluminum foil, then freeze for up to 3 months.

Remove plastic wrap and aluminum foil, set out on the counter for about 20 minutes, top with 1 cup of cheese, then bake at 350 F degrees for about 45-55 minutes, until hot and bubbly and cheese is melted. Instant Pot Chili

Instant Pot Chili is the perfect hearty, people-pleasing meal! A rich tomato base filled with ground beef, beans, peppers and seasonings tastes like it’s been simmering all day!

As much as we love a thick and hearty traditional chili recipea no-fuss Instant Pot chili recipe makes the perfect family dinner for busy weeknights. Serve it alongside cornbread or 30 minute dinner rolls for the perfect meal!

Two bowls of Instant Pot chili topped with cheese with an Instant Pot in the background and a baguette slice next to them.

How to Make Chili in an Instant Pot

Instant Pot Chili shouldn’t take more than 60 minutes to cook from start to finish. Then, to thicken, you’ll need to add more time. The amount of time depends on what thickening method you use.

But first, you need to cook the chili in the Instant Pot:

  1. Brown Beef Set the Instant Pot to sauté and brown the ground beef in two batches (drain fat).
  2. Deglaze Instant Pot Add beer and beef broth and scrape up any brown bits in the bottom of the pan. This is important to avoid getting a “burn” message on the Instant Pot.
  3. Add Ingredients Layer each of the other ingredients on top of the ground beef, then peppers, then beans, and ending with the tomatoes. I add tomatoes last, to prevent them from burning.

How Long to Cook Chili in Instant Pot

Use the chili setting for 20 minutes and let the Instant Pot natural release when the cycle is done. (You can release it sooner if you’re in a hurry, the natural release allows the flavors to blend more).

Ingredients for chili in an Instant Pot like peppers, chili powder, and beef with tomato sauce and kidney beans next to it.

How to Thicken Instant Pot Chili

This easy Instant Pot chili has a substantial amount of flavor-rich broth, thanks to the addition of beef broth and beer. When I make our favorite Stove Top Chili Recipe, a lot of the liquid evaporates while the recipe simmers away. In this recipe the liquid doesn’t have a chance to evaporate so the chili will need to be thickened before serving.

There are two ways you can do this.

  • Thicken with Cornstarch (2 minutes): Make a cornstarch and water slurry by combining equal parts water and cornstarch. When the cook cycle is done and the pressure has released, bring the chili up to a boil using the saute button.Add the slurry a little bit at a time until you reach the desired consistency.
  • Thicken by Simmering (20 minutes): Simmer your Instant Pot chili with the cover off using the sautee function for 20 minutes, or until the broth has reduced to your desired consistency.

A silver ladle serving Instant Pot chili out of the Instant Pot.

What Goes With Chili

Easy Instant Pot chili is one-pot cooking at its best! The only thing you really need to round out your meal is some kind of starch on the side.

  • To stretch the meal, serve Instant Pot chili over rice.
  • Make homemade griddle-fried corn tortillas, or use store bought ones.
  • Breads, rolls, buns, toast… they all go well.
  • Set out toppings including cheese, limes, jalapenos, cheese, cilantro, green onions, avocado

To Freeze Instant Pot Chili: You can keep easy Instant Pot chili in the fridge for up to three days, or in the freezer for up to 4 months. Simply freeze in individual portions in freezer bags. Defrost in the refrigerator overnight and reheat on the stove top.

  • 1 tablespoon tomato paste

  5. Seal the lid and valve of the Instant Pot and use the CHILI function (or set to high pressure for 25 minutes). Once completed, allow to naturally release 20 minutes. Open the valve to release any remaining pressure.

  6. Stir the chili which will likely need thickening.

To thicken the chili

  1. Remove lid, set to SAUTEE and allow to simmer 20 minutes or so until thickened
  2. Or create a slurry by combining 2 tablespoons cornstarch and 2 tablespoons water. Turn Instant Pot on to SAUTEE. Once chili begins bubbling, add the slurry a little bit at a time while mixing until chili reaches desired consistency. Allow to boil 1 minute.

How to Make Chili in a Crock Pot

This easy slow cooker chili recipe starts with Hurst’s® HamBeens® 15 Bean Soup®, onions, bell pepper and lean ground beef.  It’s all seasoned with a vegetable based seasoning packet (that comes with Hurst’s 15 Bean Soup) as well as chili seasoning and then simmered in the slow cooker until tender.

You’ll notice that the tomatoes are added towards the end of cooking, once the beans are softened.  This step is important when using dry beans because tomatoes (along with any other acidic ingredients) can interfere with the rehydration process.

Fixings and Toppings

On game day, making a chili bar is a great way to add variety and make sure everyone can enjoy their chili to preference. I set my slow cooker to warm and offer toppings like sour cream, shredded cheese, sliced jalapenos, chopped onions, assorted crackers and tortilla chips and corn bread muffins.

Easy and Delicious

This chili is both inexpensive and easy to prepare while being totally delicious! For a family dinner, it’s great served over macaroni noodles (or rice) and of course, with a big slice of homemade cornbread on the side! Should you be lucky enough to have leftovers, this recipe reheats well and can even be frozen to enjoy on another day! (Cook once, eat twice.. count me in)!

Instant Pot Salisbury Steak

Instant Pot salisbury steak is a quick and delicious dinner that is ready in just 35 minutes. On a cold winter day, there’s nothing like this comforting recipe coated in gravy to satisfy your cravings. Serve it over mashed potatoes with some roasted asparagus for the perfect meal!

This savory hearty main dish is made easy in the Instant Pot for a quick meal that tastes like you slaved all day!

What is Salisbury Steak?

When it comes to classic, home-cooked American cuisine, it doesn’t get any more authentic than Salisbury steak. This dish is nothing more than ground beef patties smothered in a rich onion and mushroom gravy. The ground beef is seasoned and mixed with egg and bread crumbs as a binder.

Traditionally, the patties are cooked in a skillet on the stovetop, and then simmered in Salisbury steak gravy, made with beef stock, onion and mushrooms. You could also pile the patties and the gravy ingredients in a crock pot, for slow cooker Salisbury steak. But if you’re looking to save time, this Instant Pot Salisbury steak with easy mushroom gravy is perfect!

How To Make Salisbury Steak From Scratch

I love cooking in my Instant Pot (if you aren’t familiar with them, you can learn more here: What is The Instant Pot?). Just follow these simple steps to make homemade Salisbury steak in your Instant Pot:

  1. Place chopped onion and sliced mushrooms in the bottom of your Instant Pot.
  2. Mix the ingredients for the beef patties, and shape into patties.
  3. Brown the patties in a skillet, and then layer onto the onion and mushrooms.
  4. Add the rest of the ingredients and cook on high pressure.

I have browned the patties in the Instant Pot (on sautee) however they can be difficult to flip so using a non-stick frying pan is easier. Either way will work!

How To Make Salisbury Steak Gravy

No Salisbury steak would be complete without a rich gravy. After the patties are finished cooking in your Instant Pot, it’s super easy to make mushroom gravy right inside the Instant Pot:

  • While the patties are still cooking in your Instant Pot, make a cornstarch and water slurry.
  • When the cooking cycle is complete, depressurize and remove the lid. Set the patties aside.
  • Turn the Instant Pot to sauté, and when the sauce starts bubbling, stir in the cornstarch slurry to thicken.

Voila, perfect rich salisbury steak gravy!

You might have noticed by now that the ingredients for Salisbury steak patties are very similar to the ones we use for meatballs. This Instant Pot Salisbury steak recipe can easily be made into Salisbury steak meatballs. Instead of forming the meat, egg and bread crumb mixture into patties, form them into 1” meatballs. Then, just proceed with the rest of the recipe as directed.

During cold winter days, there’s nothing like this traditional easy Salisbury steak recipe to satisfy your craving for comfort food.

  • 8 oz sliced mushrooms
  • 1/2 onion (sliced)
  • 1 1/2 cups beef broth (low sodium)
  • 1 oz package brown gravy mix (dry)
  • 1 tablespoon tomato paste
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh parsley
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons corn starch
  • 4 tablespoons water

Beef Patties

  • 1 1/2 lbs lean ground beef
  • 1 egg yolk
  • 1/3 cup Panko bread crumbs
  • 3 tablespoons milk
  • salt & pepper to taste
  1. Place onions and mushrooms in the bottom of the Instant Pot.

  2. Combine beef patty ingredients and form 6 patties. Brown over medium high heat (about 3 minutes per side) in a skillet. *see note

  3. Layer beef patties over mushrooms. Combine remaining ingredients except water and cornstarch. Pour over beef and cook high pressure, 18 minutes.
  4. Quick release. Remove patties and set aside.
  5. Turn IP onto sautee. Combine cold water and cornstarch. Stir into the broth and let cook a few minutes until thickened. Add beef back into the sauce to coat.
  6. Serve over mashed potatoes or rice.

These can be browned in batches of two using the sautee function. I found it difficult to flip and time consuming so opted to use a frying pan. The choice is yours.

Easy Homemade Lasagna

Homemade Lasagna is a classic, delicious dinner that every family should have in their recipe rotation. We love serving a classic lasagna dinner, complete with a caesar salad or Italian salad and dinner rolls slathered in Homemade Garlic Butter. It’s the world’s best meal!

Lasagna may seem daunting, and while there are a few steps, this is such an easy recipe – you will absolutely love it. Homemade lasagna recipe is the perfect Italian meal to warm you from the inside out!

How to Make Lasagna

When you think homemade lasagna, you might feel overwhelmed but don’t worry! The lasagna ingredients in this recipe are easy to prep and while it does take some time, it’s not difficult at all! All you’ll need for this easy lasagna recipe is one pan, one bowl and a 9×13 baking dish!

Here’s what to do to prepare for layering lasagna:

  1. In the BOWL: Mix the ricotta and divided cheeses with an egg in a bowl, and set aside.
  2. In the PAN: Brown the onion garlic and meat in a pot on the stove top. Add the pasta sauce and tomato paste.
  3. In the 9×13: Layer the meat sauce and cheese mixture with noodles and bake until bubbling

To make this into a spinach lasagna, squeeze out most of the moisture of defrosted frozen spinach and add it along with the cheese layer. Lasagna ingredients don’t have to be limited to the ones you see here. Substitute meats or different cheeses, or try different meat sauce variations. Any way you slice lasagna, it’s always delicious!

How to Layer Lasagna

Once you have prepared the meat sauce and cheeses, you’re ready to for the layering. This is the fun part! To layer lasagna:

  1. Spread about a cup of meat sauce into a 9×13 pan. Add a layer of noodles.
  2. Top the noodles with some of the cheese mixture.
  3. Repeat the layers, ending with a layer of noodles
  4. Cover with foil and bake.
  5. Remove foil, top with mozzarella and parmesan and bake another 15 minutes.

How Long to Bake Lasagna

Baking time lasagna for this recipe is about one hour total. To get that perfect browned cheese topping, you’ll need to bake it in two stages. After it’s layered, cover it tightly in foil to retain the moisture.

Once cooked, remove the foil, top with cheese, and return to the oven for another 15 minutes, or until the top is browned and your easy lasagna is bubbling.

It’s very important to let the lasagna sit for at least 15 minutes once removed from the oven (even 30 minutes is fine). This is what keeps it from becoming runny and helps it to keep its shape when cut (you don’t need to do this when you’re reheating it though).

How to Freeze Lasagna

Lasagna is one of the best meals to make ahead and freeze. I love to make two pans of this easy lasagna recipe, and save one for another day. You can either divide the already baked lasagna into several portions and pack it in freezer safe containers, or freeze the whole pan.

You can also layer the ingredients then freeze before baking. Defrost in the refrigerator overnight and bake as directed.

How To Reheat Lasagna

If you’re baking frozen prepped lasagna, it’s best to pull it out the day before you’re going to cook it so that it has a chance to defrost before it goes in the oven. This prevents it from burning on the edges and undercooking in the center.

If you’ve frozen leftovers, pop them in the oven at 350°F covered, until reheated. This should take about 30 minutes! Of course leftovers are perfect heated in the microwave too!

Instant Pot Beef Stew Ingredients

  • Choose the Right Meat:
    • When it comes to pressure cooker beef stew, there is no better cut of meat than chuck. Buy a thick chuck pot roast and cut it into chunks. If you can’t find chuck, regular stewing beef will work just fine!
  • Sear the Meat:
    • Start this easy Instant Pot Beef Stew recipe off right by searing the meat in batches. If you crowd the pan, you’ll get too much juice and the meat won’t brown properly. The bottom of your pan should have a nice glaze on it which adds a delicious richness to the broth.
  • Deglaze the Instant Pot:
    • Deglaze once the beef has a nice crust on it! Simply add broth/wine and scrape any goodies off the bottom of the pan.
  • Add the Vegetables:
    • Stay away from delicate veggies. Any veggie you’d use to make roasted root vegetables would also be great in the pressure cooker (like potatoes and carrots) as they don’t fall apart.

How Long to Cook Beef Stew in the Instant Pot

This pressure cooker beef stew recipe starts with searing the beef to get a good crust on it (don’t skip this part). This will take about 10-15 minutes or so (in 2 batches).

The stew cooks for 35 minutes in the Instant Pot but keep in mind, that’s the cooking time only. It will take about 10-15 minutes to get up to pressure and it will natural release for about 15 minutes.

Overall, you can expect this Instant Pot Beef Stew to take about 90 minutes start to finish, but don’t worry, most of the time is hands off.

What to Serve with Instant Pot Stew

Beef stew is practically a complete meat-and-potatoes meal in itself, no need to fuss with side dishes.

Serve it with dinner rolls, biscuits or corn bread slathered with butter. I also love adding a side caesar salad for a nice light crunch alongside the hearty stew.

Can You Freeze Beef Stew?

Yes you sure can! This beef stew recipe is so yummy, you might not have any leftovers. If you do, you’ll be happy to know it freezes easily.

To serve a quick beef stew dinner, no need to pre-thaw. Just empty the frozen block into a pot on low heat, and you’ll have dinner on the table again in no time!

  • 1 large onion (diced)
  • 3 tablespoons olive oil
  • 1/4 cup tomato paste
  • 3 cups beef broth

  • 1 teaspoon fresh rosemary (chopped)
  • 2 sprigs thyme
  • 4 large carrots (chopped)
  • 3 cups baby potatoes (cubed)

  • 3/4 cup peas (defrosted)
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  1. Toss beef with garlic powder, salt and pepper.
  2. Turn a 6-quart Instant Pot to sauté and add half of the olive olive oil. Brown half of the beef, about 3-5 minutes, don’t stir too much so you get a nice crust. Repeat with remaining beef.
  3. Add broth, tomato paste, rosemary, wine and vegetables (ensure ingredients do not go above fill line). Secure lid and select Meat/Stew; cook on high pressure 35 minutes.

  4. Once the timer beeps, allow for a natural-release for about 15 minutes. Release any remaining pressure.

  5. Remove lid and turn to sauté bringing broth to a boil.

  6. Create a slurry by combining cornstarch and water in a small bowl or cup.
  7. Once the broth is simmering, stir in the cornstarch to reach desired consistency (you may not need all of it). Allow to simmer 2-3 minutes or until thickened and bubbly.

  8. Stir in peas and serve.

Note: You may not need all of the cornstarch slurry.
